I would love to have a coconut cake for my wedding, but I know that there are people who don't like coconut....I was planning on having a decent size grooms cake, just white with strawberry filling, and those who don't like coconut can have that. What do you all think?

What is a coconut cake? Is the whole entire thing covered in coconut, or is it just flavored like coconut?
You could do one layer coconut if you are worried. I really wanted an all red velvet cake, but we decided to do the bottom layer red velvet only.

It depends on how many people each cake will feed. As PP said, you can't please everybody. That being said, my experience has been that coconut is a very polarizing flavor. People love it or hate it--there is no in between. (I love it.)
But why wouldn't you serve ice cream with the cake?
I love coconut so I'm pretty excited by it!
