Meals

I skimmed through the accountability threads, but they've changed since I was active here!  I've gained a bit too much during a stressful time and now I'm working on getting rid of it!  My calorie count is lower (1400) than it was last time (1650) I did this because my daily activity level has gone down (circumstances - no big deal).  I'm actually doing better than expected with the lower number.

Can you guys list some of your meals (lunch and dinner mostly) and their calorie counts?  I need new ideas!  Especially foods with protein that are filling (my stomach laughs at a serving of almonds - it's irritating).

Re: Meals

  • -mashed avocado on toast (400cal) 
    -vegetable chili (about 200 a cup, but it's crazy packed with fiber and protein) 
    -pesto pasta (about 300.. Instead of parm, I add in nutritional yeast. This decreases the fat/cal and ups the protein) 
    -pita pockets stuffed with hummus, sprouts, anything I can get my hands on :P (about 300, varies) 
    -pho (I make a big batch and so it's hard to tell what the cal count is.. next to nothing until I add in quinoa and tempeh) 
    -quinoa "fried rice" (cooked quinoa with peas, carrots, onion, and soy sauce.. tastes just like friend rice.. mmmm about 300 calories) 
    -burritos.. I love them. they always run around 400 because I loooove legumes :) 
    -spaghetti squash bake (although, it's out of season now so I don't eat it.. but it runs around 250 a serving)

    I have quinoa and barley in the cabinet - completely forgot about them!  I also never thought to put mashed avocado on toast, but damn that sounds good.

    YES. It's been an addiction for me lately. I mash it up with lemon juice, tobasco, and pepper. so good.. mmm

    Oh barley is AWESOME! Look up barley soup ideas. I just bought some. Thanks for the reminder! haha I usually just make a minestrone style soup of whateverthehell I have on hand, and throw that in as the "hearty" aspect. 

  • Calories are hard because it depends on the portion you give yourself.  None of my meals are really ever over 400-500 calores, because I have lots of snacks.  So here are some of my healthy favorites, along with a website where you can enter the recipe and divide it by the number of portions you get from it, to calculate your calories and nutrition.

  • I'm a huge fan of Dr Praegers veggie burgers+2 slices bread + whatever you like putting on...270 cal Greek yogurt is super high in protein and has that rich texture, I'll eat it at any meal or snack mixed with fruit or nuts, etc. Obsessed with Chobani at the moment, and the single serve containers are easy to take to work, 100-150 cal+whatever you mix Veggie stir fry with a protein like shrimp or scallops...as long as you're not going overkill on oil. :)

    Thanks everyone!  There are some ideas in here!

    Today, I stopped by a place called Pure Fare.  Apparently, they are a lot of places?  Anyway, they had some awesome salads and sandwich ideas, too!  I spent a few minutes just browsing their selections and getting ideas.  I also bought a nice bbq salad with avocado and papaya for dinner!  Only 326 calories.  Amazing.

    When I did this last time, I was so shocked at portion sizes and how small they were.  This time, I'm shocked at how much bigger they can be if you're really eating well.  I did greek yogurt + blackberries yesterday and planned for a full serving (1 cup of each).  It turns out that half was plenty!  Awesome.
