Share your favorite Cinco de Mayo themed Recipes...

.... because I have no idea what to bring to a party besides Tostitos and salsa.  I'd like people to think I'm a bit more creative than I actually am.  This might be a bit of a P&R but please share away!  TIA.

  • Tequila + anything

    That's as far as I usually get. 
  • Margaritas.  Lots of them.  I've seen taco cups on pinterest that look cute.  The individual seven layer dips are cute too, but I'm lazy and I would just make a big pan of it instead of portioning it individually.

  • Taquitos
    Mexican Rice
    Mini Tostadas (scoop tortilla chip, lauered from bottom up with shredded cheese, guac, and sour cream)- don't make too far ahead or they will get soggy
    Quesadillas, cut in bite size pieces (tortillas, cheese, pico de gallo and either chicken, mushrooms or beef, topped with sour cream)
    7 layer dip

  • "fancy" chunky guac-don't mash the avocado too much, and add chunks of tomato, onion, etc.

    I freaking love guac.

  • Oooh I like the guac ideas and the 7 layer dips.  I think I'm too lazy to make them individual.  

    Oh Tequila.  Everytime I drink you I feel like I've been mugged.  
  • As an aside,  it's only 10:30am and I am now craving Chipotle.  Sweet.

    I saw a recipe on Pinterest that is basically tequila over lime sorbet. I really want an excuse to make them. 

    I made this avocado green salsa for a weekend getaway and it was a big hit:

    I've also always made a dip that is easy and delicious. You just spread a block of cream cheese in the bottom of a medium baking dish or pie dish, cover with a can of chili, and top with shredded cheddar. Bake until it's bubbly and melted and serve with chips. So damn good.

  • I love quesadillas.  Are they good reheated?  I'm afraid they will get all weird.  I can make them right before but we are traveling a half hour.
  • I have a tasty corn salsa I make.  It's light and good.  Also a black bean salsa/salad.

    If you're travelling, I'd stay away from quesedillas or other tortilla based things.  I don't think they would reheat very well.

  • I think quesadillas would reheat well if you could use a pan with a tiny bit of oil so they crisp back up. It might be more of a pain than it's worth though.

  • Yeah, the soggy factor is what I'm afraid of.  Maybe if I can manage to make them there then that would be better!
  • I really like "homemade" tortilla chips to go with dip.  I just take tortillas and cut them like you would a pizza. Sprinkle some black pepper and bake for 5-6 minutes until they're golden brown.  They're crunchy and much better for you than regular chips.  They hold up really well, too.  You could do that with a guac or a corn salsa.

    This is a fantastic recipe for Frozen Mint Margaritas (<-- clicky) - totally worth the effort, and since you make them ahead they are ready to go when the party starts!  Probably not so good for traveling, although if it's not too far the mixture would probably unfreeze just enough in a cooler (it's frozen in a Ziploc).

    I also like this (<--- clicky) mango salsa served with blue tortilla chips.
