What should I...

make for dinner tonight?

I worked 2 jobs everyday this week and my awesome fiance made sure I had dinner cooked and on the table every night when I got home from work. 

So, tonight he is out doing E-pics and won't get home til almost 9.  I want to make sure his dinner is ready for him when he gets home...

So.. what should I make?  Any ideas?

    baked salmon on rice with steamed veggies! my fave! =) haha.

    I know it's too late for tonight, but for future reference:

    Chicken foil packets, steamed (or microwaved) veggies, and roasted taters. You can cook the chicken and taters together, one half of a cookie sheet for each. (Or two separate cookie sheets.) Cook at about 350 for 20 min. or so. I think I put the tater chunks on later, maybe about 5-10 min into it, but I haven't done it in a while.

    Great thing about this is that you can change it so easily - do it plan, add some rosemary and parmesan or ginger and curry on top of the chicken before closing up the packets, shake the potato chunks up with olive oil and paprika in a ziploc baggie before roasting them (do the oil no matter what). 

    You can actually roast the veggies too, if you're doing broccoli. I shake them up with olive oil, salt, pepper, halved grape tomatoes, and a little lemon juice. They only need to stay in the oven for about 5-7, same temp.
