You ladies have been so helpful the couple times I've posted so I'm back again. We are trying to decide if we want to offer late night snacks, a sweets table or both. FI wants to do both but I am a little worried it'll be overkill. I also want to make sure people are fed though and the food can balance the alcohol (yes our friends like to party)
As a guest would you prefer more food, more dessert or love the go big, all in option?

Like you said, your wedding will be a party! Substantial food (even if it's just a simple snack), as opposed to donuts, cookies, candy, etc. will feed people a lot better and soak up the booze a lot better.
I've been to weddings that have had either/or, and both. The candy buffets are largely ignored, in my opinion (they seem to be a lot of "gummy" stuff I've noticed as opposed to chocolate), whereas I've NEVER seen a late night snack ignored. We went to one (very nice) wedding where there was a HUGE sweets table, filled with gorgeous and professionally made pastries. It sat, fairly untouched, while the McD's cheeseburgers that were handed out were DEVOURED. Like, people went crazy over them. Just my experience, though...
And, selfishly, I'm not a huge sweets person and would almost always rather have a "salty" than "sweet" snack.

we offered a late night snack at our wedding and it was a HUGE hit, if you can do it go for it
It also depends on the length of your reception. If you only have 5 hours and you're doing cocktail hour, then dinner, I don't think your guests will be hungry in another hour or two. In that case, I'd do a selection of desserts. If your reception is 5pm to 1 am, meaning dinner is over by 7:30, I might bring out another round of snacks at 10:30 or 11.
