Whats for dinner?

Im always looking for new ideas for dinner...so I was thinking what if we made this a stickey and added what we are having for dinner and the recipe!!!

Tonight Im making a chicken, broccolli, rice bake. It doesnt have a name but its awsome! Here is the recipe.

4 Chicken Breasts, cooked and cubed ( I like to cook mine in chicken broth and season it with salt/pepper)
4 Cups cooked rice ( I use instant brown rice)
2 Cans of cream soup (cream of chicken, mushroom or celery)
1/2 large package of broccoli cuts (cooked)
8-10 slices of american cheese
Layer rice, chicken, broccoli and soup. Place cheese slices on top. Bake covered for 30 minutes at 350.

    Well tonight we are getting Little Caesars after our run (how counterproductive!) but last night we made fajitas..we used this recipe but did it with chicken instead. They turned out really good!

    Ingredients

    •  
      • 1/2 lb top sirloin steaks
      • 1 tablespoon olive oil
      • 1/2 tablespoon lime juice
      • 1/2 garlic cloves, finely minced
      • 1/4 teaspoon chili powder
      • 1/4 teaspoon cumin
      • 1/4 teaspoon hot pepper flakes
      • 1/4 teaspoon black pepper
      • 1/4 teaspoon salt
      • 4 flour tortillas ( 8 inch/20 cm)
      • 1/2-1 onions, we usually use approx. 1-2 depending on size ( however much you like,enough to make a good mix with the peppers)
      • 1 small sweet peppers, of your choice ( green, red, or yellow)
      • 1/2 to taste salsa
      • 1/2 to taste sour cream
      • 1/2 to taste shredded cheese
      • 1/2 to taste chopped tomatoes
    • Toppings

    Directions

    1. Slice steak into thin strips.
    2. In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.
    3. Add beef strips and stir to coat, set aside.
    4. Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
    5. Cut onions in half lengthwise and slice into strips, cut your peppers into strips.

    Directions (cont.)

    1. In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
    2. Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
    3. Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
    4. Return onions and peppers to skillet; stir for about one minute.
    5. To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

    Roasted pork tenderloin wrapped with pancetta and butternut squash sage gnocchi on the side. I love having extra time to cook now that the wedding is over :) My go-to weeknight dinner is breaded chicken with pesto with a side of arugula with lemon garlic dressing. Takes about 20 mins from fridge to plate and DH loves it.

    </div><div>I made something very similar. I cubed the chicken and sautdé it. I cooked the 4 cups of rice separate. steamed some fresh broccoli. Then when the chicken was done I used 1 can of cream of chicken soup and 1 can of cream of mushroom soup with 2 cans of water and cooked the chicken in the soup until it boiled then served the chicken and "gravy" over the rice with broccoli on the side. DH puts cheese on his broccoli. It was delish</div>

    We made a pork and apple pie last night in honor of Halloween (I think apples=Fall=Halloween was the thought process there).  It was more time-consuming than I'd usually put up with, but it made a ton and was amazing.  :)

    Last night I made stuffed green peppers...

    This makes 2 peppers:
    Brown 1/2 lb ground beef (you can use red beans if you don't eat meat)
    Cook 1 cup rice
    Combine beef (or beans) and rice in a skillet, and pour in ~2 cups salsa. Simmer for about 10 minutes.
    In the meantime, cut the tops off the green peppers and get the seeds out. Boil them for about 5-10 minutes, so they are just soft enough to be pierced with a fork.
    Put peppers in a glass loaf pan, and spoon in the rice mixture filling. Sprinkle cheese over the top.
    Bake for 10 minutes at 350.

    Sometimes I add chopped onions and/or jalepenos for a little extra kick.

    Very easy, healthy, and delicious!
