Future Mandalay Bay Bride

My FH and I just booked the platinum chapel for 10/6/12! Has anyone worked with Danielle C.? Next step is booking the reception. We've decided to go with MB catering and we'll visit for taste testing with our mothers next June! What are the reception rooms like?

    I'm not working with Danielle but I am having my reception in one of the ballrooms. Just take it from me and do you research I had talked to a couple different people from catering in the begging of my planning and got different answers from everyone.Long story short now I'm stuck in a ballroom were I hate the wall color, carpets, and it also has absolutely no windows at all. Originally I was told I would have a room with windows. The colors of this ballroom are very hard to work with and like I said I'm stuck now because I have already put down a big deposit. There are two Foyers spaces that do have floor to ceiling windows, you might want to ask about those. If you have any other questions about the catering just let me know. Good Luck.

    </div><div>One of which is the Palm Foyer, which is where we're having our reception.  The down side to that space is that it's located in the convention center so there's a possibility that there might be a convention event at night while you have your reception and you'd have some passerby, by that's a chance we're taking.  Really pretty space, you should check it out.</div><div>

    lsvensson- Hello! Do you mind telling me few things that you tried for food options. I'm hoping to get there for a tasting before my wedding but I dont know if that going to happen. My catering contact is very hard to get answers from, I have been waiting for a new menu with prices for over a month now. Just wondering if there's anything you would suggest, Thanks!

    Absolutely-- here's a run down of what we committed to:

    Passed appetizers
    -garden cherrry tomato stuffed with herbed goat cheese (sounds boring, but this is served on a little piece of brushetta and it is SO good-- plus, i wanted a vegetarian option for the handful of our guests who are vegetarians)
    -kahlua pork empanadas with honey guajillo dipping sauce (also a clear winner, and less dainty than the tomato)
    -mini chicken wellingtons in a pink peppercorn demi glace (wasn't able to try this in person at the tasting as they only had a sampling of appetizers to try, but this just sounded really good so we took a chance on it)

    Pasta station
    -all of the sauces I tried (gorgonzola cream, spicy arrabiata and bolognese) were so great that we splurged for an extra sauce choice and got all of them (the standard package just comes with two sauces)
    -for pastas, we got a tri color tortellini and the wild mushroom ravioli.  I usually hate anything with mushrooms in it but again, this was amazing (particularly in the gorgonzola cream sauce) and I thought it would be a more substantial option for our vegetarians who won't be partaking in the prime rib/salmon at the carving station

    Carving station
    -they can't roll in a full prime rib and salmon carving station for you at the tasting (obviously, that would be expensive to do for just tastings), so I'm unsure of how these taste but I'm sure they're fine.  They also come with some kind of potatoes too

    Salad/grilled veggie station
    -Again, didn't try the salad or grilled veggies at the tasting, assuming they're good as everything else we tasted was great

    Cake
    Nom!  We tried:
    -vanilla sponge cake with vanilla creme (I think-- it was really good, but we wanted something a bit more interesting)
    -orange sponge cake with vanilla creme (this was AMAZING, and sounds meh but it tasted like a cake version of an orange creamsicle-- I wanted this as one of our choices but I was overruled)

    We went for the following two, because we fell in love with both and couldn't choose just one:
    -chocolate sponge cake with a caramel pecan mousse (I hate chocolate cake, but this was divine and I knew we had to have it)
    -lemon sponge cake with coconut creme and fresh rasperry filling (also really good, and a bit interesting, we thought)
