Oh the options...

So my FI and I have to talk to a potential caterer today and we have thrown around ideas, but we really don't know how many options we should have.  We are having appetizer type foods along with fruits and vegetables and of course cake.  Any suggestions?  We don't want our guest to feel like we have skimped out but we also don't want out bill to be out of budget.

    For an appetizer only reception 8 to 10 options.  This total including any stations.

    If you're not having enough appetizers to constitute a meal, make sure you don't have your reception over a meal time.  If you do, it will definitely seem skimpy and guests will be hungry.  You could also specify on your invitation or reception card "appetizer reception to follow" so guests won't be expecting a full meal.

    The wedding ceremony will be at 6:30 with the reception following.  We felt like this was late enough not to constitute a meal.  Are we ok with that?

    I would still consider 6:30 dinner time, sorry. I wouldn't start till 7:30 or 8:00 and put on the invitation hors d'eurve (sp?) & drink reception or something like that to let guests know they should not be expecting a meal. Or please join us for a reception to include hors deurves, drinks, & dancing .... something. I think you get my point.

    I think if you're having an hors d'oeuvre reception following a 6:30 wedding, you need to have enough to constitute a full meal.  6:30 is dinner time for most people and between getting ready for the wedding, traveling to the wedding, and attending the ceremony, people won't have time for dinner before hand.  Perhaps you could either change the ceremony time?  If not, make sure that you have enough selection, variety and quantity that everyone there can feel like they've had a meal.

    You need to push the ceremony back to 7:30 or 8:00 to not serve a full meal. What time do you usually eat dinner?   6:30 is prime dinner time and guests will be getting ready and traveling to your venue for the hour before the ceremony starts.  

    That said,  I love appetizer receptions and think that they can absolutely constitute a full meal, but like PP said, 8-10 options per person at a minimum. 12 would be more ideal.

    Well we were thinking enough to constitute a meal but not have a formal sit down reception.  That isn't as common in the South.  Is everyone in agreement that about 12 varieties of appetizers would be enough that my guest would feel full?  We plan to serve water, sweet tea, lemonade, and punch along with fruit, vegetables, mini cheesecakes, etc.  A good mix of meats, bread, and such.

    12 options is a must!  Also, if you can get one or two carving stations with a meat, people will automatically feel like they are getting more!
