What's for Dinner?

Re: What's for Dinner?

I made vegetable lasagna for me, and regular lasagna for DH yesterday, so we'll be eating leftovers tonight and possibly tomorrow.

The rest of the week I plan to make sweet & sour chicken, shrimp parm and mongolian beef.  We'll probably go out to dinner on Thursday.

Monday - Wednesday - Turkey Chilli
Thursday - Saturday - Black Bean Chicken

I might have tilapia and veggies Thursday while the Black bean chicken slow cooks...

I'm going to attempt a pot roast in the crock pot, probably on Wednesday.

Probably a few meals of salad when DH is working late, probably some lazy girl pasta at some point.

DH may be doing more of the cooking this week, I'm exhausted!

Oh, I did a mushroom chicken in the crock pot last week and it totally dried out -- any recommendations on keeping chicken breast from doing that?

I'm kinda enjoying the crock pot adventures, I'm just wondering if it's going to get old and I'll just stop using it in 6 months!

Are you putting liquid there there also?  For chicken you can use chicken broth.

Amy -- it had two kinds of soup in the recipe, so there was plenty of liquid! I think I just overcooked it. Whomp whomp.

I'm back!  I am determined to cook healthy meals this week.  We ate out every night for the past week and I'm over it.

Last night I made a turkey meatloaf that was kind of gross, but edible.

Monday: rotisserie chicken, sweet pots and veggies
Tuesday: almond-crusted salmon, roasted asparagus and sweet pots
    Wednesday: fake-meat tacos
Thursday: baked chicken parm and noodles, green beans
    Friday: TBD.

RA - What's for dinner? Tacos are always a good answer. :-)

Nicole - thanks! I googled and found a meatloaf recipe with the fewest amount of ingredients and used that.  It was super basic....ground turkey, breadcrumbs, egg, onion, ketchup, salt/pepper.  i added some worchestshire sauce cause I love it.  It was EH.
