Cooking question, pasta sauce

So I have some new recipes for pasta sauces, and they all require either red or white wine as one of the ingredients. I've never made sauces with wine because we never have any on hand, and since I know nothing about wines it always seems like such a hassle.

But these recipes look really tasty, so...what exactly is the difference in sauces with and without wine? What are the best wines to use?

  • Always use a wine you would drink, or so I am told. I don't like lots of wines, and I can't stand red wine, so its always a bit of a crapshoot for me. I definitely go for a drinking wine, though, and not one labeled "cooking wine".

    It makes the taste richer.

  • It just really inhances the flavor.  I use whatever red wine  I happen to have on hand.
  • Are their specific types of wine just for cooking? I know their are wine vinigarettes and whatnot, but no idea what's actually considered a "cooking wine."I don't like wine anyway so I don't have a preferred type. I'm so clueless when it comes to alcohol.
  • There are some that are labelled "cooking wine". Everything else is for drinking.

    I have found in some stores that you can get mini bottles in like a 4 pack, so you don't have to open a whole bottle of wine when you only need like half a cup.

  • Its not pasta sauce but I saw a a cooking show where a stew was being made and both red wine AND chocolate were used to make it extra rich. It seems weird to me but i still want to try it.
  • I live with a man that collects wines, so we always have some one hand. I know we use what he calls his Tuesday (cheaper) wine for cooking. But we have bought the 4 packs of mini-wines to use just for cooking and it was fine. And then you dont have a huge bottle lying around. I think I bought a Sutter Home 4 pack.

    I would use it when we lived apart because I dont drink a lot of wines either.

  • I usually buy a merlot with some mild fruit and berry taste and prefer a bit towards the dry side.  Nothing spendy necessary.
  • I'll have to look into the mini bottles. H is a beer man and I hardly ever drink, so I'd hate to spend a lot on a wine that's not used.

    Nebb-I've made sauce with chocolate before. It's really good. Actually one of my favorites is this slightly spicy Cincinnati Chili sauce with chocolate chips.
  • mmm yum.  I've never cooked with wine either..but have wanted to try for awhile.  And very curious about the chocolate now...!
