Getting in Shape

Need Some Help!

I need a little help. I work weird hours. Mondays and Tuesdays I work 11 hour days and by the time I get home (usually 8:20) I am hungery. But I do not know what would be good meals to eat. On the days that I get home at 6:20, i will make a meal and then not eat after 7:30. I have been doing good with that. It's just hard when I can't get home before 7:30 to have dinner. Do you ladies have any good recipes that are on the light side so I don't have a heavy feeling in my stomach before I go to bed?

  • Salad? Grilled chicken with brown rice and veggies? Eating late isn't so bad as long as you're not eating a ton after you already had dinner

    It's the perfect meal.  It's not too heavy, it's quick to prepare, delicious, and a nutritional powerhouse if done properly.

    you can make pancakes ahead of time and freeze them. (flax and pumpkin pancakes are ridiculously delicious, esp. with honey on top)

    bacon and sausage are great protein, there are lighter versions, and they just taste good

    It only takes a minute to do a quick egg scramble (I use eggbeaters)

    A nice glass of milk for some dairy

    Finish it off with a chunk of grapefruit.
  • Anna, I was reading the other food list you posted in the other thread. I was wondering if you used in indoor grill or if you grilled outside? We were thinking about getting an indoor grill but not sure if it is worth it.

    We moved out big outdoor grill to the garage for overwinter and us it in there.  BUT  previous years when it's been too snowy to get to back on the deck, I used a George Foreman grill and it really did work really well.  It was just a bit of a pain to clean but hey, it was free from some relative.  If I was looking into buying an indoor grill of some sort (and I always am since I'm a kitchen appliance lover)  i'd get :  <a href="http://www.cuisinart.com/products/grills/gr-4n.html" rel="nofollow">http://www.cuisinart.com/products/grills/gr-4n.html</a>
  • I totes agree on brinner!  I think I might need to have that tonight.

    I also make an eggbeaters eggbake on the weekends, then I can eat it for any meal when I'm out of ideas :)
  • Get a rotisserie from Costco on sunday, pull off the chicken, make stock with the bones, strain the bones from the broth, add in all sorts of veggies (tomato, onion, carrot, corn, zuchini) and all the chicken back in also (minus the skin).  You'll have a delicious low-cal soup that will last you the entrire week.  The fiber from the fruits and veggies will keep you full.  Try just heating up one cup at first then after 15 miunutes if you are still hungry have another cup.  The more veggies, the hartier and the less full you'll be.  Notice i didn't say to add in noodles - while low in calories the wheat and type of carbohydrates aren't good for you.  Try to stick to carbs from fruit and veggies...
