Thanksgiving Recipes

Okay ladies, I'm going to start grocery shopping for non-perishables for my Thanksgiving feast (just FI and me this year!) so I don't have to fight the crowds too much the week before Thanksgiving except for a few items (the goal is the "Under 10 items" line!).

So spill - what's your favorite Thanksgiving item?  What's the recipe?

(Hike, maybe make this a sticky until Thanksgiving?  And then we can do another for holiday parties/Christmas?)

    Green bean casserole is a must on my table for Thanksgiving!

    I put lots of herbs and fruit (apples and oranges) inside my turkey and it's FANTASTIC!!! and my mom and I make sausage stuffing thats pretty killer!!

    Ha! Ok, I already gave this to FTL but seriously it's the best stuffing ever. I mean, no stuffing is bad IMO but you know what I mean. Though, you can't buy much of it yet, just butter if you need it and the broth. I don't stuff my bird though, so just in a baking dish, covered for 45ish minutes at 350* (or honestly, wahtever you had it set at for something else), 15 minutes uncovered for a nice golden brown top.

    Well I mean.. You cook the turkey like you would normally.. I just put stuff in it!! haha and it was actually a total accident, we just happened to have a bunch of Clementine oranges that were going to go bad, so I stuffed them inside the turkey, and I left the peel on! Apples the same way.  As far as herbs go I use Parsley, Sage, Rosemary, and Thyme (Scarborough Fair? Simon and Garfunkel? The Graduate? Anyone?).  Not too heavy on the Thyme or Rosemary cause they are mighty powerful.  When it's done it's not like fruit flavored turkey or anything, but it's really juicy and delicious!!

    I'll get the sausage stuffing recipe though.. it's in my recipe book at home.

    I'm also an enormous fan of brussel sprouts, so I just trim them, throw them on a baking sheet with olive oil, s&p and broil them (high, like 475*) for 25-30ish minutes until nice and toasty. But that might just be me. We basically cook all our veggies like that, so you can switch out for carrots, cauliflower....oh! Nix the stuffing if your FI is still doing the Paleo thing? Hmm.

    FI makes the most amazing cranberry jelly.

    Ingredients:

    One bag of cranberries (12 oz?)
    1 cup white sugar
    1 cup orange juice

    In a medium sauce pan, dissolve the sugar into the hot orange juice.  Add the cranberries (rinse first) and let cook over medium heat until the cranberries start to pop (about 10 minutes).  Take off heat and place sauce in a bowl.  It will thicken as it cools

    Haha, Irish, Paleo is definitely off the table for Thanksgiving!  He does allow himself 2 cheat meals per week, so he's counting Thanksgiving day as one big cheat meal and just eating what he wants.

    We love brussel sprouts and cook them that way, too!  But we have them probably once a week, so it's not a "special" Thanksgiving thing, so it's not on the menu.  We cook broccoli that way, too - yummy!

    And I reallllly needed a good stuffing recipe!  The first year we had Thanksgiving (literally 3 weeks after we started dating), I tried a cornbread stuffing recipe that failed miserably and I will never hear the end of it.

    Broccoli and cream cheese casserole:
    1.       Get 2 packs of chopped broccoli
    2.       ½ stick of margarine
    3.       1 pack of cream cheese
    4.       Bread crumbs

    Heat the broccoli for about 5-10 min until it has de-thawed
     
    Melt ½ stick of margarine and cream cheese together
    Once those are melted stir drain the broccoli and stir into the margarine and cream cheese mixture
    Spread in a square baking dish and top with bread crumbs (I use Italian for more flavor)
    Bake at 375 for 35 min or until the bread crumbs and the cream cheese is bubbling.

    Do you usually do corn?  I have an awesome Cornbread Casserole recipe that I love.  It's definitely not healthy, but it's delicious.  If you want the recipe I'll get up and get it for you, but I just finished working out so at this moment I'm being lazy!

    My favorite favorite thanksgiving thing is sweet potaotes.
    2 Cans of Yams
    Butter!! (Paula Deen)
    Brown Sugar
    Mini Marshmellows.

    Oven at 350ish. Slick butter and put it in the casserole dish, sprinkle brown sugar everywhere. Bake. 10 minutes before its done, sprinkle marshmellows all over.
     Amazingness!!!

    Whew, glad he's cheating! That would suuuuck! Haha

    Now I'm nervous for my stuffing!! But I'm telling you, even last night talking to my dad I heard my little brother yell something about "finding a good enough recipe to one-up my stuffing" so it's a fave in the Irishcurls home anyway!

    Irish - I may have to try it out next week!  Even though FI won't eat it when it's not Thanksgiving, at least I can give it a whirl before the big day (when he'll never forgive me if it's not perfect haha)

    dnbeach - we definitely want your recipe!  I want to see TONS of recipes!  But there's no rush, so if you're feeling lazy, post it tomorrow!

    One word of caution, it makes a buttload so especially if youre just trying it out, I would cut it down a bit. But it's sort of more of a "method" than recipe anyway. The flavors are amazing, I'm not lying. Let me know if you try it!!!

    Speaking of, I have a request on the heels of Cals. I'm flying home for Thanksgiving this year (yayyyyy, it's been 3 years since I went home for it) and we do a potluck/everyone in the kitchen type Tday at my dad's. I'm not contributing anything major since I won't be there until the night before though.

    I need a recipe I can whip up that morning--I'm actually thinking of a signature cocktail, perhaps something spicy/apple-y. Thoughts??

    Irish here's one for a Candy Apple Martini.  I haven't tried it yet, but my parents and good family friends are flying out here on Saturday, so I think I'll buy the stuff to make them while they're here.

    Irish, I highly recommend gluhwein - it's so holiday-friendly, I love it!  We had it with Thanksgiving last year and plan to do it again this year.  It's supposed to be for Christmas in Germany, but they don't celebrate Thanksgiving and I think it's just as appropriate!

    3/4 cup orange juice (or water)
    3/4 cup white sugar (or less, to taste)
    1-2 cinnamon sticks (again, to taste - or 2 teaspoons ground cinnamon)
    1 orange
    10 whole cloves
    1 bottle of wine (750 ml - if you get a bigger bottle or use more than one, just add more of everything to taste)

    In a saucepan, combine the orange juice (or water), sugar, and cinnamon stick and bring to a boil.  Reduce, and let simmer.

    Cut the orange in half, and squeeze the juice into the sugar/cinnamon mixture.  Push the cloves into the outside of the orange peel (this will keep you from having to strain the mixture later) and place the peels into the simmering mixture.  Continue simmering for 30 minutes, until thick and syrupy (and it will make the house smell DELICIOUS!)

    Pour in the wine, and heat until steaming but NOT simmering (don't want to boil off the alcohol!  Unless, of course, you do, in which case you're boring). 

    Remove the orange peels with the cloves.  Serve in mugs.  If you prefer to serve in wine glasses, you can do that but you have to pre-warm the glasses in hot water so they don't break from the heat.

    I'm a huge sucker for hot apple cider and Sailor Jerry's. Nothing fancy. :) It's my favorite fall drink!

    I am trying to convince FI that we need a Turducken this Thanksgiving, because it's likely to be our last in the Gulf south. I will order, not make, it, though.

    I adore creamed spinach, and this recipe is awesome:
    5 tbs. butter
    4 tbs. flour
    1.25 tsp. salt
    1 cup whole milk (I use 2% because that's what we drink, so it works)
    .5 tsp. groud nutmeg
    2 tbs. minced onion
    20 oz. frozen spinach-thawed
    1/4 c. water
    1 cup sour cream
    1/4 cup Parmesan cheese
    salt and pepper-to taste

    Melt 3 tbs. of butter and stir in flour and salt until creamed together, then cook for 1 minute over medium-low heat. Whisk in milk a little at a time. Increase heat to medium. Add nutmeg. Whisk until it has reached a smooth consistency. Remove from heat and set aside.
    Melt 2 tbs butter in a 2-quart saucepan over medium heat, add oinions, cook until translucent. Add spinach and water, lower the heat, and cover. Stir several times until spinach is heated. When the spinach is almost done, add your white sauce, sour cream, and Parmesan. Stir until completely blended. Add salt and pepper to tast and enjoy!

    Ooooh, and I made this the other night, it was pretty easy and FI looooved it (it also looks kind of impressive when it's done):

    3 Yukon Gold potatoes (about 1 1/2 pounds), peeled and cut into 1/4-inch thick rounds
    coarse salt and freshly ground pepper
    1 cup heavy cream
    5 garlic cloves, crushed with flat side of a large knife
    1/2 teaspoon freshly grated nutmeg
    2 tablespoons unsalted butter
    1 leek, white and pale green parts only, halved lengthwise, thinly sliced crosswise, and washed well
    1/4 cup chopped fresh flat-leaf parsley
    1 large egg yolk, for egg wash
    all-purpose flour, for dusting
    1 box store-bought puff pastry, preferably all butter, thawed
    1 1/2 cups grated Gruyere cheese

    Place the potatoes in a large saucepan and cover with water. Bring to a boil, then salt the water. Cook until the potatoes are tender, 13-15 minutes. Drain, and set aside to cool.

    In a small saucepan, combine 3/4 cup plus 3 tablespoons of the cream, the garlic and the nutmeg. Bring to a boil. Cook until it is reduced by half, then season with salt and pepper.

    In a saute pan, melt the butter. Add the leeks and cook until softened, about 5 minutes. Remove the leeks from the heat and stir in the parsley.

    Whisk the egg yolk with the remaining tablespoon of cream. Lightly flour a surface, and roll out the puff pastry into two 13×6-inch rectangles. Set one of the rectangles on a parchment lined baking sheet. Place half of the potatoes on the pastry, leaving a half inch border, overlapping the potatoes. Layer on half the leeks and half the cheese. Season with salt and pepper. Repeat the layers with the remaining potatoes, leeks and cheese. Brush the edges of the dough with the egg wash, then place the second rectangle of puff pastry on top. Gently press the edges to seal. Cut 2-inch slits crosswise in the center of the crust, 2 inches apart, to let the steam escape. Brush the top of the pastry with the remaining egg wash. Cover, and refrigerate for about 30 minutes.

    Preheat the oven to 400F. Bake the pie until it is golden brown and puffy, about 35 minutes. Remove from oven. Pour the cream mixture into the pie vents with a funnel. Bake for an additional 10 minutes. Remove to a wire rack and let sit for 10 minutes before serving.

    How have I never had this before?? I assume you use a red? Any varietal specifically? Can it be cheap? ;)

    My mom's stuffing and it is super yummy!

    1 package of Herb stuffing1 package of cornbread stuffing
    2 or 3 chicken breast (boil the chicken breast with minced garlic and onion flakes) Dice the cooked chicken
    2 cans of chicken broth
    1 stick marg.

    Mix all ingredients.  Put in baking dish and bake at 350 degrees for about an hour or until stiff (can be cut)

    I love this thread! I'm just now starting to do some serious cooking/baking because I actually have time so unfortunately I have no recipes for you :( I doubt I'll be doing any serious holiday meals anytime soon. Haha Great idea though Cal and awesome recipes :)

    Yeah, no reason to use a good red.  Anything will do! I'd recommend a fruit-forward wine, like a Merlot or a Cabernet Savignon or for a slightly more peppery wine, Malbec or Shiraz.  I personally make it with a $4 bottle of Cab Sav from Total Wines.

    I approve of this thread. I'm in class right now so have nothing to post (yup.. I'm pretty much useless atm) however, I just wanted to say that you should all post your recipes so that I can steal them for my crew dinner this month :P

    Oh, I love this thread! I'm going to have to get my dad's recipe for his twice-baked potato casserole... It's AMAZING and always a hit at my house!
