this is my food allergen list for me and my guests

i'm a bit concerned for poeple with food allergiens at my wedding. we are doing a buffet style because of this long list and several picky eaters.
somethings i don't want to leave out for everyone, but i'm terrified of cross contamination. all those with + can send people to the e.r. if something else even touches it. and those with a # the people can't even get the oils or anything on their hands or skin.
only 3 am i thinking of having and that's spegehtti for kids so tomatos but we think an alfredo might make up for that.
yellow dye would be one cakes frosted characters on it. but another cake would be yellow free.
and the 3rd is i'm pretty sure people would die of starvation if i don't have potatos.
my biggest fear is leaving my own recepition in an ambulance. because i've experinced several times how people don't take my allergy seriously. they think i'm making it up cause it's rare. and this has caused me to have many issues at resturants. (not ordering fries, they put it on the plate anyway, tell them i need my food remade cause of it. and they just push the fries off and bring me the food back that's contaminated and i have an attack)
when looking at venues i even brought this list with me. and said if you can't accomidate these issues i'm ready to leave. i plan the same for when i pick a cake maker. our venue said they can work with the allergies when planning a menu but is there anything i need to do or can do to make sure my food is safe? or should i fight to remove the potatos from my menu despite an uproar for saftey and comfort and piece of mind?
