Would you be happy?

Hi all, we're trying to finalize our dinner menu for our at home celebration after our DW. Everything will be served family style at the tables.

Starter
Guacamole with tortilla and taro chips

Tapas
Shrimp Adobado
Boniato (sweet potato) and Plantain Croquetas
Smoked Chicken Empanadas

Entrees
Seafood Paella
Grilled Marinated Skirt Steak
Chicken Mole Verde
Roasted Suckling Pig "Cubano"
Sides will include smashed Boniato, coconut rice, crispy potatoes, and a variety of roasted veggies

Dessert
Latin Dessert Platter

Could happily eat or should we maybe switch the seafood paella for a veggie paella?

    I would switch the seafood paella to a veggie paella, or something else to accommodate vegetarians during the main course.  I would also consider addng a salsa and or cheese dip with the guacamole. Personally I'm not a fan of guac and I feel like it's a love or hate thing for most people.  Otherwise, it looks fabulous!

    If you had the veggie paella, I'd be insanely happy with that menu.

    I would second adding queso or salsa along with the guacamole.I know I won't touch the stuff, my mother won't touch it, my FI's son wont either. And I know several others that dont care for it.

    Everything else seems fine to me. Atho I do agree with PPs with if you have any vegitarians I would change from the seafood to the veggie. If not, stick with the seafood.

    I wouldn't hurt to have the veggie paella, and I too agree with having another dip or two besides the guacamole. Not everyone likes guac, plus it never hurts to have options :-) The menu looks awesome though!

    Thanks ladies! I think I'll switch the paella. Unfortunately the menu beyond the entrees is set. I'm sure I could add to but I'm also sure it'll be another up charge somehow. The chips will really just be out by themselves for 10-15 minutes while they get drinks ready and get the tapas all out. I think people can probably survive that long.
