Switching Florists?

So.......I booked a florist that I fell in love with about a month ago and we have been going back and forth via email about finishing the contract....I am getting frustrated because it is taking soo long....However, I want her to handle it as I had an encounter with her assistant who told me that the petals on the cake table would be recycled petals from the side of the aisle-WHAT!!!! I talked to the florist after that happened and felt reassured...but then I requested something be added to the contract and that was about a week ago so my reassurance is slowly dwindling....What do you ladies think?

Also, I am having a headpiece for one of my flower girls....Do they use specific flowers or can you request what you want? Also, if my flowergirl dress is white with red flowers should the headpiece be white or red? (My bouquet is going to be red)

TIA

Wow... I am going through this exact situation.  I seriously was just about to write this same post!!  I've been going back n forth through email for over a month now, and I'm having trouble hearing back.  They are normally pretty responsive.  I know they are moving their studio, but still, it shouldn't be taking this long.  I'm less than 3 months away, so I'm getting really frustrated.  Debating if I should make a switch too, but I feel like I picked a good florist.
