How do I know if my caterer is good?

I've been trying to make a decision on which caterer to use for my wedding.  Every caterer I've called has said they won't do a tasting until I've signed a contract with them. How am I supposed to know who I like most if I don't know what their product is like beforehand?

    Have you found reviews of the caterers?  You might check out your local boards (look to the left) to see if anyone is familiar with the caterers. 

    The caterer for our day-before BBQ gave us a tasting that was free if we signed a contract, but she would have charged us if we decided not to go with her.  Could you see if the caterers you're looking at are willing to have that kind of arrangement?  You could agree on a price that you would pay for the tasting in the event that you didn't sign a contract with them (that's assuming their tastings are usually no charge).

    We chose ours based on recommendations from others.  They are fairly well known locally and we liked the woman that we were working with.

    Like PP suggested- they would have just made us pay for a tasting if we didn't go with them.
