Caterer Contract Question

My caterer is the exclusive caterer for our venue. I've already signed with the venue, so the caterer KNOWS they have us over a barrel (so to speak).

They want us to sign a contract/proposal before we have a tasting or talk about menu options. Is this normal? I feel very uncomfortable signing a contract without having any of the details worked out.

    Just make sure that your contract includes flexibility in the final pricing/head count/menu options and you should be fine.  This is really standard industry practice to book first and taste later.

    This.

    We signed the contract for our venue ( a banquet inside a restaurant) before tasting the food. We had the taste test and then didn't need to tell them our final  choices for a couple months. For things such as linens, we literally were making changes up until 1.5 weeks before the event (all things that effect total price in the contract) and they were OK with it.

    Just find out from them if you can change your mind about meal choices after the taste test...and get that in writing :)
