Ingredients: 12 oz. raw lean ground turkey 1/4 tsp. salt, divided 1/8 tsp. black pepper 1 cup chopped onion 1/2 cup chopped mushrooms One 14.5-oz. can crushed tomatoes 1 1/2 tsp. chopped garlic, divided 1/2 tsp. Italian seasoning One 10-oz. package frozen chopped spinach, thawed and squeezed dry 1 1/2 cups ricotta cheese 1/4 cup egg whites 1/8 tsp. ground nutmeg 24 small square wonton wrappers 1 1/2 cups shredded mozzarella cheese
Directions: Preheat oven to 375 degrees.
Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add turkey and season with 1/8 tsp. salt and pepper. Cook and crumble until no longer pink, about 5 minutes. Add onion and mushrooms and, stirring often, cook until veggies are soft and turkey is fully cooked, about 6 minutes.
Reduce heat to low. Add crushed tomatoes, 1 tsp. garlic, and Italian seasoning to the skillet. Stirring occasionally, simmer for 10 minutes. Set aside.
Meanwhile, in a bowl, combine spinach, ricotta cheese, egg substitute, nutmeg, remaining 1/8 tsp. salt, and remaining 1/2 tsp. garlic. Mix well and set aside. Spray a 12-cup muffin pan with nonstick spray. Press a wonton wrapper into the bottom and up along the sides of each cup of the pan. Then you mix mayo, cream cheese, and ranch dressing seasoning for the "sauce" and over with fresh peppers, broccoli, tomatoes, etc. It's delicious. Sorry I don't have the exact recipe, but my G'ma made it all the time.
All of these recipes sound yummy! And just in time for the holidays! I'm a fan of making pulled pork sliders for parties. They are so easy to do if you have a slow cooker! This is my "rough" recipe - I've never really written it down: 1 4-6 lb pork shoulder1 large red onion, either sliced thin or in larger pieces (depends on if you want to keep the onions in the meat at the end or just have them for flavor and then take them out)1 1/2 cup water or chicken stockspice rub (stole this from Food Network, but I modify it)3 tablespoons paprika3 tablespoons kosher salta few grinds of pepper3 tablespoons garlic powder 1 tablespoon brown sugar1 tablespoon dry mustardMake the rub, rub it on the meat all over. Remove the onions and cooking liquid (reserve liquid and onions) Take the meat out, shred it, remove the nasty bits, put back in the slow cooker with some of the cooking liquid (and onions if you want). Add about a bottle of bbq sauce (I use sweet baby ray's honey chipotle). Serve on little store bought buns with store bought (or homemade) coleslaw. Eat
-1 package REGULAR Oreos. Do not use double stuffed or reduced fat. Those come out weird. -1 block of cream cheese at room temperature. The room temp is important or you'll have a hell of a time mixing it. -1-2 bags of your choice of chocolate chips. -2-3 disposable cake pans -wax paper -tooth picks
Crush all of the Oreos. I like to put them in a gallon zip lock bag and hit them with something heavy. A metal potato masher works nicely. Put them in a big bowl when finished.
Add the SOFTENED cream cheese and mix together. Sometimes I mush it together with my hands, sometimes I use an electric mixer. Players choice.
I get a couple of the disposable cake pans from the store and line the bottom with wax paper.
Take a gob of the mix and roll it in your hands to make it round. I make them a litte smaller than the size of a golf ball and place them in the cake pan. This takes up about 2 of them total. Place tooth picks in the top of all the balls and put in the freezer for about 2 hours.
After they've been in the freezer, I boil some water and put the chocolate chips in a metal bowl and put that over the water in a double boiler type of way. DO NOT put the chocolate chips directly in the pan. Yes you will melt the chocolate, but then it will cook. It's not easy to work with after it's cooked and it tastes different.
I dip the balls in the melted chocolate and place back in the cake pan. Let harden in the fridge.

The recipe I'm always asked to bring to any potluck, etc (to the point I get tired of bringing it and get in trouble when I don't) is Watergate Salad (but everyone usually just calls it The Green Stuff)
1 regular size carton of cool whip, thawed (it can be the reduced fat/fat-free or reduced sugar, doesn't change the taste) 1 pkg of pistachio pudding mix (again, can be the sugar-free without changing the taste) 1 20 oz can of crushed pineapple (do not drain) 1 cup mini marshmallows (seriously, though, don't measure them, just dump a couple handfuls in)
Mix the dry pudding mix into the cool whip until all pudding is dissolved, then add the pineapple and stir until well mixed and dump in the marshmallows (just fold them in a bit). Cover and refrigerate for a couple hours before serving.
- Canned chili, can be with beans, w/o bean or vegetarian. As far as amount it can be as many or as few cans as you want. - Velveeta - Cream cheese - baking dish, size appropriate to amount of chili being used.
Spread chili in baking dish (chili layer should be between 1-2 inches thick). Cut up Velveeta and cream cheese. Cover entire layer of chili with the two cheeses ( you can add as much or as little cheese as you would like). Bake in a 400 degree oven until warmed through and Velveeta has started to melt and cream cheese is soft. Mix until well blended. Serve with tortilla chips.
My famous, super easy, endless possibilities Mini Quiche. I've done ham and cheese, Spinich and cheese, even crab and cheese. For the crab one you need to make sure you drain the crab well or the quiches will get soupy.
1 package refrigerated pie crust 1 c. chopped cooked ham or whatever meat/veggie filling 1 c. grated cheese of your liking 1 c. milk 4 eggs

12 Eggs
6 oz smoked salmon
1/3 cup mayo
3 tbsp sour cream
1 1/2 tsp chopped fresh dill
Salt and pepper to taste
Prepare like you would regularly do deviled eggs, but shred the salmon and mix it in with the yolks, mayo, sour cream, and dill.
(Last time I made this, the eggs didn't peel cleanly, so I just chopped them up and made a dill salmon egg salad. Delish)
