catering vent/ideas needed

We thought we had catering all figured out.  We have a friend who owns a restraunt and does catering, we talked to her in December about doing the wedding and she gave us quite a few ideas.  We talked to her again and set a menu and asked for a quote a few months ago.  We never got the quote so early last month we talked to her, she emailed with a question about drinks but still no quote.  FI emailed her early this week and she said "I thought I emailed you the quote where their changes to the menu?"  SO he responds that there were no changes and repeats our food choices.  Still no quote...
now we're looking for other options but our area has very little to offer...literally there are 2 places listed in our phone book and one just burnt down.
I initially wanted to do a pig roast but my mother didn't like that idea and my uncle that would do it is suffering from cancer.
We want a full meal, not just sandwich trays, buffet style.  Just basic comfort foods...ham, green beans, macaroni and cheese, scalloped potatoes is what we have so far...
Any suggestions?  WE are even thinking of maybe trying to do it ourselves.

This caterer sounds like a bit of a flake, but you need to call her again and tell her you appreciate that she has a busy schedule, but you and your FI need to make some final food decisions and that cannot be done until she provides a quote. Tell her directly that you want a quote e-mailed to you immediately....or even better, FAXED to you within the next hour.  OR just show up at her establishment and ask for a copy of the quote right then and there.

Where is the reception venue located? I see your info says Philadelphia but I know that can't be for the reception since you said you could only locate 2 options.

I would only ever think of doing it yourself if you have friends and/or family you can rely on who are willing to pitch in.

My reception is in Juniata County about half way between Harrisburg and State College...we've contacted a few other caterers that sound promising but as of yet don't have a quote...

Try kayskatering.com She's located in Middleburg, so I hope thats close enough to you. My mom's friend used her for her daughters wedding and they loved her. I'm also pretty sure she offers all of the foods you mentioned and is super affordable. Good Luck!

I'd highly recommend checking out uncommon caterers in Harrisburg.  The make only fresh food.. nothing frozen and their prices are very reasonable!  Linda is super sweet and great to work with!  She's made so much for our office!  We love her!
