  • The salad sounds good I love salads with fruit in them.

    Last week I made a chick pea tomato salad.  It had chick peas, garlic, spinach, fresh basil and grape tomatoes in it.  I added some olive oil and red wine vingegar and seasoned with salt and pepper.

  • That sounds delicious, I'm adding it to the list! You know, I never used to like fruit in salad, but lately I've given it a chance and started to enjoy the flavour. My tastebuds must be maturing!
  • I made two great salads this weekend.  One was a goat cheese salad with warm apples glazed in balsamic and slightly wilted spinach tossed in with the apples while they are glazing.  The other was a lime/garlic marinated chicken salad tossed with a little bit of black beans and some other assorted veggies (corn would have been a great add but, sadly, I didn't have any).

    Your salad sounds delish. I've only recently started cooking with chickpeas, they're not an ingredient my mom used at all so it's an experiment for me. When you put them in the salad do you just drain them from the tin? Or do you prepare them in anyway?
  • I mostly work with dried beans.  If I used canned beans and I did until recently I would just rinse them.

    I cooked the dried beans in my rice cooker actually. For every cup of beans I add about a cup of water. It takes about an hour or so until they are soft.  I check on them every 20 minutes to stir and sometimes add more water.

    I am a fan of salads in the summer as well!

    I love simple/staple salads.  One of my faves is:
    Baby Spinach
    Prosciutto (rolled up and sliced into thin strips)
    Finely sliced cucumber
    Raspberry
    Pine Nuts
    Olive Oil
    Sea Salt
    Pepper
    Dash of your favorite vinaigrette

    Thanks danser - I know what's for dinner tonight :)

    When my bf brings his rice cooker back home after the summer I'll look into the dried beans, the more I can cook from scratch the better.

    I am the same way, I try to cook from scratch as often as possible. I try to avoid canned goods too, if I can.   Good luck with the recipe let me know how it turns out.

    I usually make a base with a few small black beans, onion and mushroom and marinate that first.  Then I layer in the apple (something sweet like gala) with the balsamic (if you can marinate the apple for an hour or so before hand with the balsamic and even a little brown suger it will be even better).  While that is cooking I pop my pre-made goat cheese in the oven for about 10 minutes- I usually flatten them into disks, put a little egg wash on them and dip them in a thyme/chives/panko mixture so they are crunchy and savory (the goat cheese then gets frozen for an hour or so so it retains its shape when it is put in the oven).  Or you could just sprinkle the goat cheese on top (much easier).  About 5 minutes before the apple/mushroom mixture is done, I throw the spinach on top and let it wilt just slightly.  It really is divine.
