  I had never heard of that tradition! We are doing homemade cookies as favors to take home, and are making 3-5 per person so thay have pleanty enjoy later. You could also make extras, and maybe bring out some cute bags at the end of the evening (after everyone has had a chance to have some already) and invite guests to take some home.

  I'm having a milk and cookies bar.  The caterer is handling it, but I figure it should be at least 3-4 cookies per person.

  and here I was thinking I was stawrting a new trend, haha! We aren't cake people and I can't stand the idea of spending that much on a cake, so I am doing a snack table. Gourmet popcorn, candy, mints, cookies and brownies.
  I'll probably have at least 600 cookies since we are having 200 people.

  I've seen it done at a few weddings in Knoxville, TN! If you're serving treats other than the wedding cake and cookies, I'd stick with 2-3. If you're not, I'd go with 4-5.  At the last wedding I attended with a cookie table, they had the cookies out during the cocktail hour (along with fruit & cheese). The bride's colors were orange and pink. She made labels identifying the type of cookie and glued it to an orange ribbon if it had peanuts and a pink ribbon if it didn't. She framed a note telling people what the color code was.

  A coworker of mine from Pittsburgh did this. She said it was a tradition there as well. I believe she did 25 dozen (her friends and family brought them. She didn't make them herself) for about 180 people, and she had at least two dozen left over at the end (which she brought in to the office, so it all worked out in the end :-))

  
  

  I guess if you figure 2 cookies per person, that would be 24 dozen for 140 people. Some people will have more, some will have less.

  I'm having 145 people and my mom has assigned each of my aunt's and my grandma to make 3 dozen.  That's 7 people so I guess we'll have about 250 cookies.  I believe that's plenty since that'll be out with the veggie & fruit trays.

  I am also having a cookie table at my wedding, but almost everyone in Pittsburgh does.  Search the Pittsburgh, PA local board, as there have been several threads on cookie tables.  For my wedding of 70 people I am having around 13 dozen cookies.  I am also providing to go bags, as most couples in Pittsburgh will provide to go bags to guests. 
  
  I know when I was resarching cookie tables I remembered reaching to do around 6 cookies per guest, although that estimate is probably on the high side.
