    Veggie Pasta

    1lb Penne
    3 boneless chicken breasts (optional)
    1 1/4 Tsp salt
    1/2 tsp black pepper
    4 Tbsp olive oil
    5 cloves sliced garlic
    1 can (28oz) plum tomatoes in juice, break them up
    1 medium zuccini, sliced and quartered
    1 medium sweet yellow pepper, cut into strips
    2 Tbsp balsamic vinegar
    2 Tbsp tomato paste
    1/2 c fresh basil
    1/4 c fresh mozerella balls, quartered

    Lightly coat a pan with non stick spray and heat to medium.  Cook pasta as directed.  Season chicken with 1/4 tsp of salt and pepper.  Grill chicken & cut into strips.  When the pasta is done toss with 2 Tbsp of olive oil.  Heat remaining oil in skillet, Add garlic and cook 1 minute. Add tomato with juice, zuccini & yellow pepper, cook 3 mins.  Stir in chicken and heat throughout.  Toss this sauce with the pasta and add basil and mozerella.

    When I made this I left out the chicken b/c I forgot to take it out. It came out just as yummy and saves on time if you ask me :)

    Cooler weather means baking time!

    Pumpkin or Butternut Squash Bread

    3 c white sugar
    1/2 tsp baking powder
    2 tsp baking soda
    1 tsp salt
    1 tsp cloves
    1 tsp cinnamon
    1 tsp nutmeg
    1 tsp ginger (optional)
    1 c oil
    1 c water
    3 1/2 c flour
    2 c pumpkin or 2 c butternut squash, cooked & cooled
    4 eggs

    Combine dry ingredients.  Add water, oil, eggs, and pumkin or squash. Pour 1/2 full into 3 greased and floured 9"x5" loaf pans.

    Bake at 325 degrees for 1 hour and 15 minutes or when toothpick inserted in middle comes out clean.

    Jaimie - Always been afraid of dishes that say polenta, but it's just cornmeal! And it sounds good!

    Chrisine - Sounds yummy! That is definitely something I will make! You always have great picks! (And thanks for another stove recipe!)

    Kate - Perfect timing! I was just looking for a butternut squash recipe!

    I honestly never knew what it was, but the name never appealed to me. Now I know it means cornmeal, I feel a lot better! Thanks!

    To start with trying polenta, make creamy parmasean polenta first to make sure you like it! My mom makes this all of the time and everyone love it
