NWR: Favorite potluck dish?

Hi everyone. So I need help, and I figured why not try here? 
My job is having a potluck for the last day before Christmas vacation (I work in a school), and I have NO idea what to make.

Last year, I made chicken parm but I dont wanna make something so time consuming and large, you know? I'm already bringing some dessert but wanted to bring some actual food as well. 

What would you make / bring? Main dishes and / or side dishes?

  • I always enjoy pasta salad, even if others bring it too there are so many variations that they're not all the same. IMO, can't go wrong with pasta...

  • When I worked in a grocery store and they had this avaible in the deli I'd get it.  It's a broccoli salad. It has broccoli, yogury, mayo, cranberries, sunflower kernels, crispy bacon, onion and a few other things in it, but it was amazing! It is a good idea if you want to do a salad.

  • Macaroni Casserole. It's my all time favourite mass-produceable, and so easy to make. Make a meat sauce, mix with some cooked macaroni, pour into a cassrole dish, and cover with shredded cheese. Bake at 375 for about twenty minutes, or until the cheese melts, and voila!
  • I usually bring in pasta salad, 7 layer dip, or spinach dip,  All very easy to make and not time consuming.

  • We have pitch ins at my work all the time, and for the last I made crockpot potato soup... It was a big hit and super easy! 

    1 30oz bag frozen shredded hashbrowns
    1 14oz can cream of chicken soup
    3 cans chicken broth 
    1/4 tsp pepper (or as much as you like) 
    1/2 onion, chopped 

    Throw all that in the crock pot on low for 6 hours, stirring occasionally (if you think of it).

    Add 1 8oz block cream cheese (not lite cream cheese, must be full fat or it won't melt properly) to the mix 1 hr before serving.  

    Give it a good stir before serving, and top with shredded cheddar cheese, chopped chives, bacon bits, whatever you like!

  • We have a potluck at work as well, and I'm bringing apple spice muffins (it's brunch themed).  I have also done a cheese dip in the crock pot before.  It's easy, just plug it in & stir it up.  Also, it's easy to do a fruit/veggie/cheese tray ahead of time.  I second the pasta salad reccommendation too.

  • I typically bring a spinach and artichoke dip, becuase its easy to make in mass quantity. My favorite recipe is either the cooking light recipe or the one on skinnytaste.com

    I assume since you make chicken parm you are well versed in italian food.
    so, I would also second a baked penne dish. 
    I usually do mine with a vodka sauce which is easy to "fake it". By combining a nice jar of sauce with 2 shots of vodka and a cup of cream (I use light cream)
    then toss with pasta and part skim motzerella, and bake for 25 min.

    It's so easy to reheat in a micro too. (I would suggest breaking it into two dishes)

  • I've also done the 7 layer dip (although mine is never actually 7 layers lol). It's always been a big hit. I've also just done fruit or veggie trays, chips and dip/salsa, but I do dessert most often.

    Someone here at work makes "dirty diapers"...they are AMAZING!!! I think it's like ground sausage or hamburger and cream cheese mixed/melted together, and then you put it in those crescent rolls that come in a can and bake. They are always a major hit!

  • I am having a pot luck and I am making chicken legs- they are usuaslly cheap (like $4.00 for 20 chicken legs). Cut an onion on the bottom of hte pan, rub a mixture of adobo and olive oil on the inside and outside of hte chicken, sprinkle paprika, cover and put in the oven for 1 hr at 350 degrees, and you are done. They can easily be microwaved the next day or reheated in a chafing dish.
  • I usually just bring desserts (because my cooking can be... well, dangerous), but when I have to do main dishes I do baked ziti, and for appetizers I do 6-layer dip (beans, sour cream, guac, Rotel tomatos, cheese, black olives). The 6-layer dip is no-cook, so it's hard to screw up. The baked ziti is just pasta layered with sauce (you can fancy up the sauce if you like) and cheese, so not too difficult either.     I think I'm going to go with penne & vodka... seems like it would be easy (I've made it before) and easy to make a lot of.
