Planting ceremony

We are interested in doing a planting ceremony as part of our special day. We would like our mothers to bring soil from their gardens, bringing the families together. The difficult thing is, we currently live in a condo in a climate that is very dry, cold (we have snow close to 8 months out of the year) and when it warms up it can get up to 35 degrees celsius plus humidity. What type of plants would you recommend for this type of ceremony with this type of climate?
