    Ok you guys have to try this. It's healthy and YUMMY!!! You also can add/remove whatever you want for this one. Lots of fiber, this helps you poop!

    Texas Caviar

    1 cup white sugar
    3/4 cup cider vinegar
    1/4 cup vegetable oil
    1 tsp black pepper
    Chopped onions (1/2 of an onion)
    Chopped jalapenos (I like lots of them, like 4)
    Chopped green peppers (red/yellow ones too if you want)
    Chopped celery
    Chopped tomatoes
    1 can pinto beans
    1 can garbonzo beans
    1 can white corn
    1 can black beans

    (you can also add whatever else you want- different beans, more veggies, etc)

    1. Boil sugar, cider vinegar, vegetable oil, pepper then set aside to cool
    2. Drain the canned stuff (beans/corn) and rinse
    3. Put everything together in a bowl

    Enjoy with chips, on pasta, mixed with chicken, in salad, etc. There will be a lot of juice left as you go through them- just add more beans, vegetables.

    I usually buy 2 cans of everything and chop every vegetable and keep 1/2 of them to add when there is a lot of juice left.

    It lasts for 2 good weeks probably.

    Here's one of our family favorites... FI is half Hungarian and my grandma also makes this and it's just so ridiculously good.

    Hungarian Chicken Paprikash


    Ingredients:

    • 4 tablespoons (1/2 stick) butter
    • 1 medium onion, finely chopped
    • 1 (3 1/2-pound) chicken, cut up
    • 1 green pepper, seeded and chopped
    • 1 large tomato, peeled, seeded and chopped or 1 (14.5-ounce) can chopped tomatoes undrained
    • 1 clove garlic, finely chopped
    • 1 tablespoon sweet or hot Hungarian paprika
    • Salt and black pepper
    • 3/4 cup water
    • 1 cup sour cream
    • 2 tablespoons all-purpose flour

    Preparation:

    1. Heat butter in a Dutch oven or large skillet with a lid. Add onion and saute over low heat until translucent.
    2. Add chicken pieces and brown lightly on both sides. Add green peppers, tomatoes, garlic and paprika. Season to taste with salt and pepper and stir in water. Bring to a boil. Reduce heat to low, cover and cook 35 minutes or until chicken is tender (about 20 minutes if using only chicken breasts).
    3. Remove chicken to a heated platter and keep warm. In a small bowl, mix sour cream with flour. Temper mixture with some of the pan juices. Return tempered sour cream mixture to pan and simmer until juices are thickened. Return chicken to pan to rewarm.
    4. Portion into heated bowls or plates, and serve with boiled rice, nokedli, which are similar to German spaetzle. Or arrange on a platter of noodles for a family-style presentation.

  • I have these going in my crockpot RIGHT NOW! I used one bottle of low-fat light Caesar dressing to try to cut a few calories.  So excited to have them for dinner:

    Slow Cooker Chicken Caesar Sandwiches
    adapted from Betty Crocker

    2 pounds boneless skinless chicken thighs
    1 bottle of your favorite Caesar Dressing (I used Brianna's Asiago Caesar) OR 1 (10 oz) can cream of chicken soup plus one packet Caesar Dressing mix

    1/2 cup shredded Parmesan cheese
    1/4 cup fresh chopped parsley
    1/2 teaspoon ground pepper
    2 cups shredded romaine lettuce
    12 french hamburger buns or buns of your choice (about 2 1/2 inch)


    1.  Place chicken in a 3-4 quart slow cooker, cover and cook on low heat for 6-7 hours.
    2.  Remove chicken from cooker using a slotted spoon.  Place on a cutting board and pull chicken into shreds.
    3.  Place chicken back in the cooker and pour dressing (or cream of chicken plus dressing packet), Parmesan cheese, parsley, and pepper over the top.  I only used about 3/4 of the bottle of dressing.  Stir until mixed evenly. Cover and cook on high heat for 30-35 minutes or until mixture is hot. 
    4.  Spoon 1/4 cup mixture onto lettuce in each bun and serve!

    I suck and haven't made anything from scratch lately lol I did find a soft pretzel recipe in Good Housekeeping that I'm dying to try, though! Unfortunately, it's at home so I can't post it...

  • I have been really into trying new crockpot recipes lately. I love how tender the meat gets after a whole day of slow cooking, and even better, I especially love how dinner is ready after fiance and I get home after a long day of work and working out :) if anyone has any good ones, please share!!!!!!!!
  • Oh man, now I'm hoping we get the slow cooker on our registry more than ever!

    I know, I love walking in and it smells like dinner waiting for me! FI loves making bbq pulled pork in the crockpot and it is always awesome! It's not super healthy, but I can probably get a recipe if anyone is interested! I know he cooks it in root beer? or something...I've heard you can also use Dr Pepper (can't taste it at all in the final product.)

    owengirl, I live in Indiana.....you KNOW I love me some good pulled pork ;) that sounds delicious!
  • Ok...I tried a new recipe last weekend and FI and our girls loved it. It was super fast and easy too!  

    Ingredients:

    2 - 4 boneless, skinless chicken breast halves
    10 ounces apricot preseverves
    10 ounces catalina dressing
    1 - small onion, sliced
    1/2 cup chicken broth
    1 tbsp minced garlic

    Preheat oven to 350degrees.  Mix apricot preserves, catalina, broth and garlic in a large bowl.  Spray bottom of a baking dish lightly with non stick spray and place in chicken breasts.  Top with onion slices. Pour catalina mixture over chicken.  Cover with foil and bake for 60 minutes.  

    I served it with steamed asparagus and rice.  It was really really good!
