It's Tasty Tuesday!

Casseroles!! I personally love casseroles, though they are not always the healthiest! BUT they are super easy to prepare and make! I love that you can just throw them together in a casserole dish, put them in the oven and forget about it until dinner time. 

What's one of your favorite casserole recipes?

Here is one of my favorite casserole recipes that my mother used to make for the family when I was a kid:

Tuna Casserole

1 bag of egg noodles, cooked (I use smart taste because it's higher in fiber and less calories)

1 can of peas

2 cans of condenced mushroom soup (low sodium if you're trying to lower calories)

1/2 a cup of milk

Crushed potato chips 

2 cans of light tuna

1. Set the oven temperature to 325 before you cook the pasta so it'll be ready when the pasta is done. 
2. Prepare the casserole dish by spraying it with pam. Add in all of the ingredients except the chips and mix them around. 
3. Sprinkle the crushed potatoe chips on top to your liking. 
4. Put in the oven for about 35 minutes. Go do some crafts for your wedding. Come back, take out of oven and serve! Smile

Unfortunately, this dish tastes the best on the first day. Leftovers are not nearly as tasty because the chips get moist and soggy. This can be remedied by just adding some fresh chips to the top of it.

  • I love tuna casserole. I don't know why, probably childhood memories. I may need to make that again soon! 

    I also love breakfast casseroles but I have never made one. My friend did one that combined eggs, sausage, hash browns, and cheddar. It was delicious! It was similar to this recipe: link

  • i've never made a casserole dish, unless you count this taco casserole i made one time that was a flop. :/ and i made lasagna once, but that was a lot of work and not super great.

    looking forward to seeing everyone elses' recipes though!

  • I'm not really a casserole kinda person but "paté chinois" has been a fave of mine since I was a kid. It's basically just ground beef topped with corn and mashed potatoes. So simple but so yummy :) My son loves it with peas.

    One of my fave casseroles is the following:
    (it's actually made on the stove but then mixed together to be reheated as a casserole)

    Salsafied Chicken & Rice

    Ingredients
    1 pound skinless, boneless chicken breast halves - cubed
    1 tablespoon olive oil
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1 (14.5 ounce) can chicken broth
    1 (8 ounce) jar salsa
    2 cups instant rice
    8 ounces shredded Cheddar cheese

    Directions
    1. In a large skillet over medium high heat brown the cubed chicken in oil, salt and pepper until cooked through and juices run clear. Add the broth and salsa and bring to a boil.
    2. Once the liquids are boiling, turn off the heat and stir in the instant rice.
    Either, Sprinkle all of the cheese on top. Cover and let sit for 5 minutes, then serve. OR
    Put in casserole dish and place in fridge until ready to prepare. Add rice before reheating.

  • Oh, I just thought of another one I made and really liked!

    Chicken and Green Chili Tortilla Casserole
    • 1 cups fat-free low sodium chicken broth
    • 1 cup canned chopped green chiles, drained
    • 1 cup chopped onion 
    • 1 cup fat-free sour cream 
    • 3/4 teaspoon salt
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon freshly ground black pepper
    • (10 1/2-ounce) cans condensed 98% fat-free cream of chicken soup, undiluted (such as Campbell's)
    • garlic clove, minced 
    • Cooking spray 
    • 24 (6-inch) corn tortillas
    • 4 cups shredded cooked chicken breast (about 1 pound) 
    • 2 cups (8 ounces) finely shredded sharp cheddar cheese 
    1. Preheat oven to 350°.
    2. Combine the first 9 ingredients in a large saucepan, stirring with a whisk. Bring to a boil, stirring constantly. Remove from heat.
    3. Spread 1 cup soup mixture in a 13 x 9-inch baking dish coated with cooking spray. Arrange 6 tortillas over the soup mixture, and top with 1 cup chicken and 1/2 cup cheese. Repeat layers, ending with the cheese. Spread remaining soup mixture over cheese. Bake at 350° for 30 minutes or until bubbly.

  • Green bean casserole! I don't really have directions, but I just throw in a dish green beans, crispy onions I think that's what you call them!, and cream of mushroom soup. Bake at 350 for 20 minutes until golden brown!

  • LOVE, LOVE, LOVE casseroles! I'm all about NOT spending a Sh$t ton amount of time in the kitchen. One of our all time faves is called Shperds Pie, so easy to make!

    1 lb of ground beef
    Onion (if desired)
    3 Tbls of Worcestershire sauce
    2 Tbls of ketchup
    2 tsp of beef bouillon
    1 large can of pork n beans
    1 box instant mashed potatoe's (8 oz)
    Grated sharp cheddar cheese (to taste)

    Brown beef & onions, drain & add worcestershire, ketchup, bouillon
    Pour into a 9x9 dish
    Pour beans on top of meat 
    Sprinkle cheese on top of beans
    Cover completly(to the edge) with mashed potatoe's 

    Put on baking sheet (sometimes it bubbles over!) and cook on 350 for about 20 minutes. Remove and sprinkle more cheese on top, then put back in oven until cheese is melted

    Best served warm with crusty french bread!! This dish also reheats well in both the oven or the microwave.
  • I pretty much love casseroles! I have a couple that I make on a regular basis. Sorry I'm not really a written down recipe girl though so these are just kind of loose this is what I do instructions, I probably cook stuff at a different temp every time I do them.
     
    Louisiana Porkchops
    4-6 porkchops browned
    2 cups Rice (I use brown)
    2 cans Cream of Mushroom soup ( I use reduced fat)
    Bread Crumbs or croutons

    Brown porkchops and cook rice, combine rice and soup, arrange browned chops in bottom of 9x13 pan and add rice& soup mixture, sprinkle with breadcrumbs-they make really yummy crispy bits to mix into soft rice mixture ater baking.  Bake @ 400 for 25 min or so until hot and top is browned. Super easy and too bad nutrition wise if you use reduced fat

    Another variation on the pork chop casserole and maybe even easier is porkchops and applesauce casserole.  I use boneless skinless porkchops  and brown in serperate pan, in a 8x8 spread a can of sugar free apple pie filling, lay porkchops on top of apples cover entire dish with stuffing. I use a pork stuffign box, but stovetop or anything will work, prepare stuffing per directions but not over heat, it cooks in oven you just want it wet.  400 for 30 minutes, everything is super moist and delicious and I am a total applesauce with my pork chops girl so i think its awesome, FI likes it but isn't quite so enthusiastic he really like the other one better.

    Corn Casserole is another fav at my house,
    1 box Jiffy Cornbread mix
    1 can regular corn
    1 can creamed corn
    1 egg
    1/2 cup sour cream (I use reduced fat)
    1/2 cup milk ( I use skim)

    mix all together and bake for 30 minutes @ 425, like really moist corn bread.

    I have a new favorite ww casserole I make too
    boil and shred a couple chicken breasts add a can of enchilada sauce to it and spread in an 8x8 or casserole dish and cut up pieces of reduces fat flaky biscuits, I added some peppers and black olives too, bake for 30 minutes I think this one is 375, biscuit chunks bubble up and act as tortilla pieces for an enchilada bake.
