this is probably not the 100% healthiest recipe that i could post, but this is one of my all-time favorite recipes to make: homemade chicken fingers. this pioneerwoman blog is awesome and her how-to photographs are what gave me the inspiration for making my own chicken fingers.
i add tons of seasoning to the batter (garlic, parsley, onion powder, pepper - anything you like but try to keep it low in sodium).
i also fry in just a TINY bit of olive oil. you will see from the pioneer woman's pictures that she uses LOTS of oil, but this really isn't necessary - i really just pour enough olive oil to cover the whole pan, but no more than maybe 1/8 inch deep of the olive oil.
you can also bake them if you want to get rid of the oil all together!!
I have been drinking peanut butter banana smoothies for breakfast and it's delicious!!
This is for 1 smoothie so double if you make one for FI too.
1/2 frozen banana (i cut mine into chunks then take the skin off) 1 cup low fat greek yogurt I use Cabot low fat vanilla greek yogurt (this is loaded with protein) 3 ice cubes 1 tbsp peanut butter 1/4-1/2 cup of skim milk (this is really used to just liquefy the smoothie)
Put everything in the blender and mix. I also add 1 tbsp of flax see oil at the end I stir that in with a spoon. Flax see oil helps with your belly fat and you can't even tasted it
Edit if you are couting calories this is about 335 according to my fitness pal but it will fill you up until lunch time.
If your FI is a carnivore like mine, then he will love bacon-wrapped pork chops. This is my go-to when I can't think of anything else. I serve it with yellow rice and green beans. You will need:
8 slices pepper bacon
4 pork chops (no bone)
salt
white pepper
EVOO
Season chops with EVOO, salt and white pepper. Braise both sides of chops on a hot skillet. Let the chops cool for a few. Wrap each chop with two slices of pepper bacon. Cook on medium high heat (both sides) for about 5 mins each side until the bacon is to your liking (I like it crispy, personally). If you're unsure if the chops are cooked all the way through, then you can throw it in the oven on 350 F for about 10 mins.
butterflyjumper - LOVE pioneerwoman... I have one of her cookbooks... the pictures are so beautiful and her recipes are out of this world (definitely not diet friendly, either hahaha)
I saw them make this on the Biggest Loser this week and it looked pretty good... I'm not convinced that turkey tastes as good as ground beef or chicken but I'll probably try this out this weekend:
Turkey Tacos
1-1 1/4 lb ground turkey 15 oz can of black beans jar of salsa tomato, onions, jalapenos, cilantro, juice from 2 limes (I'd like to add garlic, too) 8 corn tortillas
Heat large saute pan... brown turkey while crumbling, add salt & pepper. Once cooked, add salsa and black beans, cook through.
Combine toms, ons, jals, cilantro, lime juice, (garlic), in a separate bowl - season with salt & pepper
Heat corn tortillas on stove (or I do them in the microwave between wet paper towels)
Serve turkey mixture on tortillas with salsa mixture

prepare the brownie how you usually prepare them but omit the water, oil, and eggs and only add pureed black beans to the batter.
Trust me they taste delicious and not gross. I was even kid approved!
