Dessert Buffet Reception...how much food do I need??

i'm planning on doing a dessert buffet for my May 1st Sunday afternoon wedding. Guest list is 140 people...trying to figure how much food I need. I'm wanting to do apple pies, pecan pies, muffins, cookies, peach cobbler(outdoor, rustic, vintage theme), but I don't want to over-bake and be left with tons of extra food. HELP!

    Sounds good so far.
    I would add in some fruit, veggies, cheese and crackers... that sort of thing. In the afternoon, I try to stick with more healthy food so I don't ruin my appetite for dinner with junk food. That's just me.
    You want to make sure you have enough for everyone to have one piece and figure that at least half of those people will probably take seconds, especially the cookies.

    I don't know that you have to add veggies to a dessert buffet, I mean, they don't exactly go with the flow, but definitely some fresh fruit and some less sweet options would be a great way to go.

    Have you sent out your invitations yet? Maybe there is a way you could incorporate people's likes into the response card. It could be a way to track which pie/cakes would be more popular and you can gauge how much to make based on that. You wouldn't want to make 3 pecan pies and have one slice taken from only one of the pies. Just a thought.

    Also, I would try to balance all the sweet with something salty or savory. Dipped pretzels or cracker or maybe scones. It sounds like it will be beautiful.

    Rather than baking a whole pie, it might be better to make pie pops, that way guests would not have to slice it and it would just be easier for them to grab.
