It really depends on what you prefer and how you think your guests would like to choose their own seats or have assigned seats. We did assigned seats, it became a little stressful at times when trying to figure out who to sit where so keep that in mind.
Yep, all up to you and what you really prefer for dinner/lunch. I've went to all of the above and had no issue, but that's just me. We are doing buffet with assigned tables, not seats. Yep, uh huh.
If I had to choose between hors d’oeuvres buffet at cocktail hour then a sit-down dinner or a sit-down dinner then a dessert buffet, I personally would vote for dessert buffet. I love dessert tho. But I heard people might eat less cake due to this as as a bride I would pick hors d’oeuvres buffet for my guest. LOL
We're doing buffet because it was cheaper. plus it will give us enough time to eat and cut the cake before everyone is done eating and gets bored. We're not sure how we're doing seating yet, but i like M1ss J's idea of having older folks served.
We're having passed hors devoures during the cocktail hour and the dinner is sit down. Buffet and sit down were the same cost so I opted for sit down....less commotion. It really depends on the vibe you want. We've having assigned tables, not seats.

Have an hors d’oeuvres buffet at cocktail hour and then a sit-down dinner. I vote for this. We were going to do family style, but then we attended a family style event. If you're the last person being served at the table, sometimes there won't be enough food left for you. My problem with buffets is that they call tables by number and what if you're at the last table.?? You have to wait forever to get your food after everybody been picking over it. I vote for sit down dinner. We're having passed and stationed hors d'oeuvres and sit down dinner. Assigned tables, not seats.

We are having bulter passed cocktail hour with a brunch buffet. We are assigning tables and not seats. Elderly guests will be served seatside.
With the variation in dietary restrictions, and the extra $20 pp, buffet was the way to go for us
