DIY Cupcakes?

I was wondering if any ladies had/will do DIY cupcakes?

We're looking at $450.00 to have a local bakery make them for us, but my FMIL is an amazing baker (she also made like 300 mini canoli cupcakes for my FBIL's wedding as his groom cake last year, so I know she can handle it.) She suggested doing it herself.  

Was it a giant hassle? She'll have a kitchen to use (ours).  How much did it cost you?

    It can be done but remember that cupcakes dry out really quickly so they need to be kept sealed for moistness as late as possible.   You can also buy some really great cupcake wrappers to dress them up.   I've made cupcake wrappers using scrapbook paper from Michaels.  Also think about how you are going to display so many cupcakes.   You can make a cupcake tower by attaching 1/2" board to cake stands and stacking them.  Use clear latex caulk to hold them together.   I recently made one for my couin's wedding.   I'll try to attach a picture to give you and idea of what I"m talking about.

    If she has done something similar before, I think it will be ok. I can't remember where I read it, but someone did this and just started making them a few days before, and froze them. I have only done this with cookies and cookie dough, but it should be the same.
    I would also talk about the logistics with your FMIL. GL.

    Since she's done it before, I'd have her do it!

    As long as you have enough space and time, it should be fine!

    My sister is a baker & she is making mine (and I am going to help and hope not to mess anything up too badly!) Just make sure you have a high-efficiency/commercial stand mixer for FMIL to use.  Cheap mixers can't handle that amount of frosting - the motor will burn out.

    I would highly suggest using mixes instead of making the cupcakes from scratch (frosting from scratch though, of course). You'll have more consistency with the batter if you use a mix, and with that many cupcakes it's just a heck of a lot easier.
