Ice cream cake recs?

Andrew's grad ceremony is on Saturday (yay!) and I'm inviting our families over after for a bbq. I want to make an ice cream cake, any recs for recipes you like?

    Lol.  I'd just go to DQ and get a Blizzard ice cream cake :) Probably Reese's peanut butter cup.

  • Now that is not a half bad idea. FI used to work at DQ and loves their Blizzards. But if I go that route I won't earn any gold stars for my domestic diva badge ;)

    Ben and Jerry's way:

    I just bake brownies and then break them all up into little pieces. I pack a metal cake pan half with one flavor, then I put a thin layer of brownies and freeze. Then I pack second flavor and pack the rest of the brownies into the bottom, sticking them into the ice cream, freeze again.

    Once totally frozen, I flip it upside down onto another cake pan and rinse the whole thing with hot water. When the ice cream starts to drip out the sides, you are ready to put it all on the counter, gently and slowly slip the pan off, pushing on the top like a snapple cap, leaving just the frozen cake. You can just pick up the cake then and move it to the desired cake dish.

    I mix one part powdered sugar two parts heavy cream and whip up (not very sweet) icing. I used a kitchenaid at BJ's, but you can use a hand held or by hand. DO NOT over whip! "Soft peaks"! "Soft peaks!" (that's my boss talking, meaning check your whip cream by lifting up, making perfect peaks that don't fall.) Whip cream is MUCH better than frozen frosting!

    I frost the cake spinning it with a flat edge of a knife and freeze one more time before I put on borders and decorations.

  • I worked at coldstone in high school and made their ice cream cakes, it was so much fun! It's really not hard if you have a good springform pan. Let me know if you want any tips/ideas!

  • Reddy-that sounds freaking awesome! His fave ice cream is mint chocolate chip and that goes really well with brownies. Would I be able to make it the day before? As in have enough time for the freezing, refreezing?

    Seriously though I am going to have to make this for FI. I make whipped cream rather than normal frosting. I personally don't like how sweet it is.

  • We had the idea here to make ice cream cake balls, but hte school's freezer wouldn't freeze them hard enough. The idea was a little ball of ice cream with a stick in it, frozen solid, covered in cakeball material, refrozen, and then dipped. I wish it would have worked for the retirement party last week, because it would have been AWESOME!

Flip, put on dish, put it back in the freezer for an hour, frost, back in the freezer (frosting takes the shortest to freeze).
