Getting Healthy in 2011

Thanks to coastiegirl’s support board, I’ve decided to really get my act together for 2011. Last night, I used Lauren’s inside out lasagna recipe for dinner, did an hour of exercising on the Wii Fit and bought baby carrots and yogurt for my lunches and rice cakes for my mid-day snacking. 

I even made my resolutions: I’m going to cook at least one healthy meal from fresh ingredients a week, exercise 4 days a week, and not eat more than 7 sweets a week.

There’s a great website for healthy recipes I found called eatingwell.com .

So how about you guys? Any more success stories from our shiny new support group?

    yes and sort-of-yes...

    i walked my puppy last night and then did 35 minutes of aerobics/dance.  i ate healthy most of the day, but after dinner i was craving sugar so i had an oreo, a skinny cow ice cream sandwich, and 5 or 6 gummy bears... and then i stopped there.  and this morning i have walked past all sorts of treats at the office.

    my younger bro is also trying to lose weight, but he is WAY obese... BMI of 51.  but it helps me to try harder and work out more because i want to encourage him.  and FI and my mom are also in on the 2011 lifestyle change...  we are calling it the wedding workout.  we all want to slim down by the wedding in July.  now to just get my dad to join us...  :)

    i had some healthy cereal with a little bit of trail mix for breakfast and brought a PBJ and some baked chips with salsa for lunch.  and easy peel clementines/grapes/banana for snacks or sugar cravings. 

    now that i brought my lunch, i really want subway.  maybe tomorrow...  ??

    Well, I can't say that I did as well as you. I've slacked on the exercise front.

    However, BF and I have decided to develop meal plans for the week and we are going to alternate who does the meal plan...for variety and alleviate any annoyance on having to do it.  Our objectives are more to prevent eating out as much because of the amount of fat, sugar and sodium in them.

    So, yesterday we had baked oatmeal with apples and cranberries for breakfast, split pea and root vegetable soup for lunch and grilled chicken with polenta and sauted spinach for supper.

    BF is going crazy cooking for his crazy diet... which I'm following mostly to support him.  I would be eating healthier, but a lot more leniently, if it was up to me.  This thing is crazy strict!  But my dinner was there when I got home, my lunch was packed for me today, and he thrust breakfast at me as soon as I walked in from my run, so I can't argue with healthy food ready to eat.

    I've got to run more or else this half marathon is going to kill me.

    yes and yes!

    i am going to a zumba class in 2 weeks so i'm trying to up my cardio and strength before then.  i don't want to show up for an hour of zumba and look like a fool for collapsing after 20 minutes.  :(

    I wish I had the willpower to eat healthier. I like junk food too much!

    To those of you who live alone (or at one point lived alone) do you find it hard to cook healthy for one person? That seems to be my problem. I'll cook super healthy meals when it is me and K, but when it is just me, I'll throw a frozen pizza in the oven or something equivalent.

    ember- i find it easier to cook healthy when it's just me.  i'll make a big batch of soup or pasta or whatever, and put it in containers and freeze it.  or grill a few pieces of chicken and stick them in the fridge and use them.  but when it's my family, it's hard because they don't like healthy food.  try batch cooking?

    I've been doing better as well actually. I just started bring all my food with me to school since Mondays and Tuesdays I'm here all day. I hate preparing food just to make it "leftovers" instead of fresh to school, so I stick to really fresh food. Multigrain bread, a bit of cheddar cheese, peanut butter, LOTS of baby carrots, some apples, hummus, water, etc.

    Then I'm planning on gym 3 times a week, and hopefully work up to 4.

    I need to make a trip to the grocery store on the weekend for next week though. I think I'll do that Friday so I can pick up some chicken for the weekend.

    i did that in college and it helped me maintain a low weight.  i also packed some of those microwaveable soups and heated them up in the union.

    I started back on my plan (SlimGenics) yesterday. I lost 35 lbs on it last year, but have gained about 15 of that back...so i'm looking to surpass last year's achievement and hopefully make it to my goal this year! I lost the 35 lbs last year with very little exercise, so this time around I plan to exercise 5x per week. Started on the treadmill last night. Yippee!

    Girls, to cook well for one, I highly recommend a crock pot.  It requires a lot less work and makes food that lasts for quite awhile.  It also doesn't require the extra effort at night when you get home from work. You can throw just about anything in there (chicken with mushrooms and veggies in a tomato sauce, minestrone soup, etc.)

    My favorite quick, healthy recipe (that makes really good leftovers) is chicken or turkey chili:

    Saute a pound or so of ground chicken or turkey in a large sauce pan with a cup of diced onions and a minced clove of garlic.  Add Mexican Chili Powder, cumin, paprika, salt & pepper to taste.  Once browned, add two cans of diced tomatoes.  Open, drain, and add a can of kidney beans, red beans, and any other beans you want to add (I like navy beans).  Cover and let simmer for 20-30 minutes.  Taste and add spices as necessary.

    Yay! I'm so glad that it motivated so many of you!  Cocobella, NO SUBWAY. You brought your lunch!  Well unless you get the low cal one then it's cool.

    oh i LOVE the low-cal subway.  turkey with american cheese, toasted, and piled high with veggies and oil/vinegar instead of mayo.  OMG.  so good.

    I'm hate leftovers. I think that is mostly the problem. I don't think certain foods warm up well for a second time and I hate eating the same thing for a week. I also don't want to take all the time to cook and then have to enjoy the meal with just me and my kitties. I end up going to my parents house to eat dinner when I get tired of frozen meals. :)

    I did okay eating yesterday, but I didn't go to the gym.  I had some friends in town that were leaving yesterday evening, so I went to happy hour with them instead.  I AM going to go to the gym today.  Hopefully the "I am" will work better for me than "I should", which is what I've been saying the last few months...

    I definetly thought living alone made it easier to eat healthy...the BF has the metabolism of a 5 year old no joke, loves junk food and will not eat vegetables..it blows. But I did buy a bunch of vegetables for salads for myself last night & we did the first day of 30 day shred. Soooo just gotta keep it up. I will say, it was nice to have him suffer with me through it. Mwahaha.

    So onto the subject, I'm thinking about making some taco soup tonight and I'm pretty excited about it. I'll let you guys know if it turns out well.

    I went walking yesterday during lunch. Although I'm kinda sad I didn't get to do anything last night. I did stay busy cleaning and doing laundry while my guy was at the gym.

    Oh and with all this talk of carrots it reminded me about my cousin giving them to his dog. Has anyone ever heard of giving dogs carrots? He was saying that the dog thinks they are a treat and it helps clean their teeth.

    no, i graduated from a private university. 

    we also give our dogs carrots because they are healthier than treats.  our vet suggested it, and they LOVE carrots.

    EDIT:  ember - i batch cook and then freeze it.  i have a variety of 4-7 different kinds of batch cooked frozen bowls of stuff in the freezer at any time.  and i do healthy pizza crust that way too.  it's like frozen dinners, only cheaper/better/lower sodium.

    at the risk of sounding stupid, is your chili spicy? and can I un-spicy it?


    And for all the rest of your girls, would you mind sharing your healthy recipes?
    Like Niknik's Taco soup, or CocoBella's batch cooked meals ? I think those would be especially helpful for next year, so BF doesn't have to take on as much of the cooking burden when I'm in med school.

    Pomodoro from allrecipes.
    Changes:  add a can of diced tomatoes, use olive oil and vinegar to taste, plus add some Red Wine Vinegar; sometimes I'll add sliced mushrooms and/or chicken or shrimp.

    Minestrone from foodnetwork and eatlikeme.
    Changes:  i do not use pancetta (make it vegetarian); i follow the eatlikeme steps for it... you can find them here.

    Pantry-pasta... 
    1.  Sautee lean sliced meat with onions and garlic and olive oil in a pan.  Put the meat aside and add frozen or fresh veggies.  Sautee the veggies until cooked and add any kind of red marinara sauce.  Add in the meat, let simmer for a few minutes.  Add spices (and minimal salt) as needed.  Serve over any kind of whole wheat noodles. 
    2.  Same thing, only instead of red marinara use a combo of olive oil/red wine vinegar/balsamic vinegar.  (like a pomodoro)

    i have a weight watchers Chicken Tortilla Soup recipe I'll dig out.  it's amazing and freezes well.

    on msn's cooking site, they have lots of low-cal recipes that are fantastic.

    Nope, it's not at all spicy.  Mexican Chili Powder is actually not spicy at all, just flavorful.  Even the "Hot Mexican Chili Powder" is not spicy (and I think it tastes better than the normal one, so I usually use the "hot" version).

    Trust me, I can't handle spicy.  My BF would drop a habanero on just about anything, but I can't even handle a drop of Tabasco.  Though anyone who wanted it spicy could easily add red pepper flakes or Tabasco, the original recipe is flavorful without being at all spicy.

    When I went Vegan for about 4 months (lost 50 lbs on it and felt great, however, it is SO HARD to keep up), Subway was a lifesaver for me some nights. Vegan meals take time and patience to make, and sometimes after work I just didn't have either, so I would grab a veggie sub from Subway. Their Italian bread is Vegan friendly, and they have that Veggie Delight that just has veggies. I think the entire sub had like, 300 calories lol

    Here is the link to the soup I'm going to try. It says its 'spicy' but I'm not sure what in it they are calling spicy unless its the taco and ranch seasoning packets.

    I on the other hand do like some spice, but not too much. Every once in a while I like to get a little sweat on. Although I have to say that I absolutely hate tabasco. It tastes like vinager. My boyfriend loves it and puts it on almost everything, but its definitely not for me!

    Thanks, after the success of Lauren's inside-out lasagne, I'm excited to try these out.
    Not to mention I got a shiny new crockpot for christmas :)

    I did not do well when it came to exercising yesterday but I did do well when it came to food. I was 400 calories under my maximum daily allowance. Today I am also doing well with food. I have a healthy breakfast and lunch. I have no idea what I am doing for dinner yet though.

    I ate a Wendy's Jr. Cheeseburger today.  I will feel NO SHAME because I lost 12lbs last month and will continue my healthy habits after my cheeseburger.  Eat my shorts =P

    I just did a P90X workout today...holy crap I forgot how intense those are.  Hopefully I wont be too sore tomorrow and I can do another one.

    As for the food today, so far so good.  I had my usual fiber one chewy bar and water for breakfast (150 cal), a lean cuisine (290 cal) and whole wheat crackers (50 cal for 6) for lunch.  FI is eating dinner at work, so I still have to figure something healthy-ish to cook for myself, which might be hard since we haven't gone grocery shopping yet.

    All in all, I feel pretty good about getting back on track.  Hopefully you ladies can help me keep it up :)
