DIY Grilling Reception in the Park

I have a few questions, but mostly would like fellow bride's (and groom's) opinions. 

We have yet to finalize our guest list, but it will be between 50-80 people, including children.  We're planning on just having a small ceremony, and have the reception in a park: it's an open area, kids can have fun, and we can grill!  My family and my fiancé's family love grilling.  We're planning on burgers and hotdogs, the regular toppings (buns, cheese, pickles, lettuce, etc.), potato salads, bowls of fruit and veggies, simple sides (chips, dills, olives,etc.) and as for drinks, just water, iced tea and coffee (maybe Kool-aid). 

We're thinking on forming the burgers one or two days before with wax paper in between the patties and place them and the hotdogs in roaster trays for easy transportation and grilling.  I think 2 of each per person would be plenty.

For the cold items, I was thinking about using dry ice and coolers for transportation and platters/bowls in trays of ice for serving.  I was also thinking about putting the toppings in larger containers with marked lids, to avoid the 'which lid goes to which jar' hassle, and ease of putting things back into the coolers if needed.  I'm still tweaking the amounts for the potato salad.  I want at least 2 types, mustard and Amish.

The bowls of fruit and veggies would work better than trays, keeping cold wise, and have to worry less about the look of the trays.  Still not sure of the amounts, but I'm thinking on the heavy side since the weather will be warm in May/June.

For the drinks, just large jugs with taps to serve, and have the fixings to make more on hand.

As for the wedding cake, we're doing cupcakes!  Easy, less forks and plates, and both of our families love 'em!  And we could have more flavours, what with everyone having different tastes.

We were thinking on having a small/short ceremony at the park, then get to grilling (maybe preheating the grills during the 'I dos'?).  Just treating it as if it was just another summer party in the park.  What do you think?

    Also, we're getting married next year, so we have plenty of time for planning.

    Sounds like so much fun...May I have an invite please???? I love BBQ's...going & throwing. Girl, sounds like you have everything under control, simple sweet and what you & FI want. I do have a few tips for you though, as an avid BBQ king & queen as dubbed by our family, I do have a few tips you might wanna keep in mind, and all were learned from trial & error.
    1. If you're using charcoal start grill before the ceremony if possible, it can take up to 45 min for it to get to right cooking temp.
    2. Make drinks too sweet then add ice keeps drinks cold & won't water them down.
    3. Have blankets available for the kids (some adults too) to pass out on....
    4.Have plenty of sunscreen available 
    Oh yeah,almost forgot you can season, patty, wax paper & freeze the burgers for up to 2 months prior and don't really need to defrost them before cooking unless there thick. However, they need to be in a deep freezer that's not opened often or vaccuum sealed.

    I think it sounds awesome. 

    I do have logistical questions... Who will be operating the grill?  Who will be setting up the reception?  Are there places to sit?  What will you do if it rains?  Are there rest rooms?

    If you have answers to those, you're on the right track.

    I was at an party picnic and instead of having things that needed to be iced(salads fuits and veg.) which typically don't do well if left out long. To avoid this hassle, they used oblong kids blow up pools, filled them with ice and placed it on picnic tables They may have had 2 rings but only filled one? I think I have seen them with just one ring to blow up as well. That way it can stay out and keep cool for a much longer time. They are very inexpensive.

      My FI and I considered something like this but due to the possibility of rain, and having to do all the work ourselves we opted for a regular wedding reception at our venue which is a lovely 1840s style mansion.

    Mob --That is an INCREDIBLE idea!  We are having our party in July in FL, so it was a Q on my mind.  I am snaggin this one!  Thanks!
    Also,  thanks for thinking of the sunblock!  We are starting our party at 5, but the sun will still be kicken!

     I think it sounds like an awesome time:)  Maybe you want to have some frisbees, sidewalk chalk, bubbles, etc.  to play with.

    Also -- for burgers -- we did a party for about 40-60...preformed and froze the burgers on trays the week before.  It worked great!

    Sorry I've been gone for so long.  Life took a few turns there.  

    We have decided to do an indoor wedding/reception.  Although I did find the perfect spot for an out door wedding reception: Jerry Ivey Park in Salina.  We talked with a few friends who are farmers, and they said next year has a BIG chance of being rainy, It's still going to be small, and I think I'll stick with the food plan I have, working with a few ideas from everyone here.
