  • I have made my favorite summer cucumber salad twice now it is waiting for us to eat it up for dinner tonight.  I just wing it so this is an estimated recipe.

    3 cucumbers peeled and cut in small cube pieces
    2 bunches of scallions (i only use the white part of the scallion)
    3 tbsp of mayo
    salt to taste
    dill weed (i like to use the dried kind but you can use fresh just chop it up fine)

    add peeled and cut cucumbers into a bowl, add chopped scallions, add mayo, salt and dill.  I probably use about 1 tsp of dill.  Put in the refrigerator for about an hour before serving.  I like to make mine the night before we are going to eat it.  Letting it sit over night makes it taste so much better the day after!!

    I usually serve this as a side dish with steak or chicken.  I also love to snack on this while watching tv.  To make it healthier you can use reduced fat mayo.

  • Yum!  I also make a cucumber salad often. 

    I peel and chop two cucumbers; chop one large tomato; half of a red onion; add dried oregano (as much as you like); crumbled feta cheese and a balsamic vinegarette...mix together and ta-da.  It's really easy and refreshing.  FI loves this...and so do I. :)
