I've been a cookie-making fool these past couple weeks, trying out different chocolate cookie recipes for our wedding favors. My problem is that I want a soft cookie, but the day after I bake them, they get hard and crunchy (not super hard, but definitely not as soft as I want). I put them in air tight tupperware after they are cool, and I've even tried putting a piece of white bread in there to keep moisture, but it hasn't really helped. Does anyone have a good chocolate cookie recipe that makes super soft cookies that will stay soft for at least a day or two? TIA

Christmas Sugar Cut-Out Cookies
2 cups Flour 1 cup Sugar
½ tsp Baking powder 1 egg (beaten)
½ tsp baking soda 2 tbsp milk
½ tsp salt ½ tsp vanilla
2/3 cups butter/margerin ½ tsp lemon extract
Cream butter and sugar – blend in egg, milk, and flavoring – blend in dry ingredients… CHILL in refrigerator for 2 hours. Roll 1/8” thick on lightly floured board. Cut into shapes. Bake on cookie sheet 10 – 12 mins. 375 oven (15 Dozen cookies) DOUBLE this amount...
WE made these just in Oct for My best friends baby shower.. they were a hit.. I baked them 8 minutes and we used pumpkins for ours.. hope this helps...
1/4 cup butter,
4 squares (1 ounce each) unsweetened chocolate,
2 cups flour,
2 cups sugar,
4 eggs,
2 tsps baking pwoder,
1/2 tsp salt,
1/2 c chopped pecans or walnuts,
powdered sugar for rolling.
In small saucepan, melt butter and chocolate over low heat, 8-10 mins.
Cool. In large bowl, combine melted chocolate mixture, 1 c flour, sugar,
eggs, baking powder and salt. Beat at med speed, scraping bowl often,
until well mixed, 2-3 mins. Stir in remaining flour and nuts. Heat oven
to 300 degrees. Shape rounded teaspoonfuls of dough into 1 inch balls,
roll in powdered sugar. Place 2 inches apart on greased cookie sheets.
Bake for 12-15 minutes, or until firm to the touch. Remove immediately.
Makes about 4 dozen cookies.
Though, when I make them now, I add more walnuts. But, than again, you could keep the walnuts out for people who may have allergies to nuts. They are delicious either way.
