El Dorado Royale has gotten awesome reviews here - we're headed there in 2.5 weeks for our honeymoon.  It's an adults only all-inclusive resort near Cancun, right on the ocean.

Breezes - it's not couples only, but they have options for just about everything.

My brother went to a RIU resort in the Dominican for his and loved it!! He said they had 7 different restaurants with all different kinds of food and he's super picky when it comes to food. He said there was a swim up bar and 3 pools. There is one in Cancun.

I've heard good things about Riu resorts, just like Veijes posted. I've also heard really good things about Grand Palladium resorts.

I'm going to Cozumel for a week in March and staying at an Iberostar...  I'll let you know how it is.

We went to Grand Palladium Riviera Maya for our honeymoon and it was fantastic.  We loved the food, the beach, everything.  We found a great deal on Expedia.  We loved it so much we are actually going back with his parents in a few weeks!

We stayed at one of the Palace Resorts (they have many across Mexico and one in the Dominican Republic).  They are all inclusive and very lux.  My DH and I really enjoyed our stay there (as well as a few friends who have been to other resorts of theirs).
We hope to return to a Palace resort in the future as we completely trust them regarding their service, comfort and luxurious accomodations.

The Valentin Imperial Maya is in the Riviera Maya. It is beautiful with spectacular rooms and food! It is also adults only. This winter was the seond time I visited this resort.  It also happens to be where I got engaged :)

I've gone to a Palace Resorts in Cancun, too!  Amazing.  The one we went to was outside of the city, but they have an adults only one, too, right in the hotel zone.

I'm actually heading back to the Dominican Republic Palace Resorts location next month with my family (a last-trip with the family before I'm married type of deal)!  I'm expecting nothing but the best :)

We're going to a Sandal's adults only all inc. next June in St. Lucia.  I know two people that stayed at the same resort last summer and they only had great things to say about it.

Definitely check out El Dorado Royale (full review and photos in my bio).  It's in Riviera Maya in Mexico and one of my coworkers just went there on her honeymoon and got a great deal staying in a Casita (your own private "hut").
