Hey ladies! Two days ago H and I ate some surprisingly delicious year old cake; thanks to the advice of a July '10 bride who shared this tip with the July '11 board - so I wanted to pass it on. Sincy July's almost over I thought you all would get more use from it :-)
We took the cake home in the box provided and then wrapped it in a layer of aluminum foil, a layer of cling wrap, another layer of aluminum foil, and another layer of cling wrap. I used the glad press n seal and it worked beautifully.
We then took it out of the freezer the night before our anniversary, removed all the wrapping and took the cake out. To my surprise there was no wrapping between the box and the cake itself. It didn't seem to be any worse for the wear, but I kinda wish I'd opened up the box a year ago and realized that - I would have added some wrapping and found a smaller box; it was twice what it needed to be and took up so much room in our freezer! We then wrapped it in one layer of wax paper and one layer of saran wrap and put it in the fridge to defrost for about 24 hours.
If you're keeping your top tier I recommend you try it out - I was honestly shocked at how good the cake still was; it wasn't just a symbolic bite and into the trash, we enjoyed it and H even had some more last night.
