Brainstorming Our Menu...

We are having an early October wedding in a barn.  Dinner will be buffet style with a full open bar. I'm wanting to stick with comfort food that most everyone likes while subtly incorporating the fall theme into the food.  FI and I are major foodies and what I don't want is to have the the steriotypical chicken/beef entres.

Anything in italics I am still considering - please give opinions and suggestions!

Appetizers:
- Chicken Wing Lollypops (for FI)
- Those tomato, basil and mozzerella things (caprese I think?)
- Pumpkin Bisque
- A super awesome garden salad

Meats:
- Prime Rib Carving Station. (About the only thing I care about.  This is my fave.)
- Turkey Carving Station

Sides:
- Mashed Potato Bar with yellow and sweet potatoes (a server will mix whatever ingredients the guest wants into the potatoes). Nom nom nom...
- Butternut Squash Ravioli? Or Lasagna?
- Some sort of mixed vegetable medley
- Assorted warm breads with fancy spreads

Desserts:
- Cake (of course)
- Chocolate Fountain with assorted dippers
- S'mores station (yes, with fire)

Is that enough food? Is that awesome yummylicioius enough food? Would you like to eat at my wedding (assuming all food is made properly)?

What would you add?

Re: Brainstorming Our Menu...

  • Overall it sounds good to me.

I would do the caprese salad and turkey station. I like the butternut squash more than the lasagna but either is fine.

I'm not a chocolate fountain fan. It sounds good in theory, but IRL it's gross.

What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.
  • Chocolate fountains are yummy, but tend to get kind of messy/drippy. Maybe a small Viennese table or ice cream sundae bar instead?  Pie and ice cream?

I think the buffet food sounds great, but I think I'd look for a couple more appetizers (if there's a cocktail hour) and maybe a couple more side dish/veggie options.

I'm doing country/Southern style comfort foods too, so I'm all about this kind of menu. ;)
  • We had caprese skewers during cocktail hour as a passed app.  We also had fondue on our dessert table, but it was just a delicious chafing dish of chocolate with fruit and cake to dip--less messy than a chocolate fountain, and there was nothing added to the chocolate to make it flow better.

Will the garden salad be during cocktail hour?  How will that work?

I would definitely have a hearty pasta dish that vegetarians can eat along with your vegetable medley.  Mashed potatoes and some mixed veggies isn't really enough, IMO.
  • You guys have a good point about the chocolate fountain :-/  Maybe an assortment of other "finger food desserts" (e.g., chocolate covered strawberries, mini cheesecakes, gourmet cookies, etc.?)

Jessica, for the other option for vegetarians I was thinking the butternut squash ravioli or butternut squash lasagna. Everyone I ask seems to have a pretty good response to that.

During cocktail hour, the appetizers will not be butler passed - they will be stationary.  That's why I think I salad bar type thing would work. Does that make sense? Or should I put salad out with dinner?

I agree that I need more appetizers and at least one more side option.  Any additional suggestions?? Maybe a spinach artichoke dip - everyone likes that!
  • Caprese salad doesn't strike me as a fall dish, but it's usually a crowd pleaser.  I'd definitely also include the turkey carving station because some people are averse to red meat.  (Walking the walk here: we did both a beef and turkey carving station for that very reason).

I'd prefer the butternut squash ravioli (and it would be another thing vegetarians can eat).
  • I agree about adding the turkey carving station for the same reasons mentioned.

If you are thinking "fall comfort foods", what about dressing/stuffing as a side dish if you go with the carved turkey? I also think an option for vegetarians is needed, and somewhat hearty. The first thing I thought of was mac n cheese. I've had lobster mac & cheese that is to die for, but you may need to consider whether any of your guests have seafood allergies.

Some comfort food desserts would be apple pie or apple crisp, bread pudding, banana pudding, or just pudding in general in martini glasses or ramekins, or serve yourself.

Personally, I'd move the salad to the dinner buffet. For an additional appetizer I'd probably offer puff pastries with some gourmet cheeses inside, or some other type of finger food that seems "fallish". Stuffed mushrooms?

And yes, I'd love the food at your wedding!
  • I'd put the salad on the buffet.  If you're standing around holding your purse and a drink, and one of the appetizers, how are you going to handle a salad plate and fork?

Spinach dip sounds good.  Any kind of dip, or crostini, or spreads.  More skewered options like chicken satay or grilled veggie skewers.  Mini quiches.  The little spinach in puff pastry bites.  The tortilla rollups. Crabcakes. Cold shrimp with cocktail sauce.
  • How about chocolate fondue instead of the fountain? Way back when at my college graduation party, my mom rented a chocolate fountain. She was still finding little bits of chocolate splatter all over her kitchen months later ... I definitely suggest to avoid the fountain!
  • - Those tomato, basil and mozzerella things (caprese I think?)

Are you thinking of bruschetta? It goes on top of toasted bread and is so delicious.
