Anyone know some ideas for a unique caribbean menu

looking for some ideas for our menu...i couldn't bring in my own caterer at my venue..i think the chef there isn't to familiar with these types of foods..any suggestions and keeping my families happy...this is so important..if i can't pull this meal off..i will have alot of ver unhappy people

  • What IS the chef familar with?  Has he/she given you some ideas?
  • Actually...i am going to talk to the chef soon..but i wanted to come up with some great ideas before we talked so i can bring something to the table

  • If the chef isn't familiar with West Indian dishes, I would go with a continental menu. My H & I are from a West Indian background but we served a continental menu that got a lot of raves from our guests. It's generic so there is something for everyone no matter your background.  This is what our dinner menu looked like:

    Salad
    Pasta (great for kids or as a meat alternative)
    Chicken
    Salmon (another meat alternative)
    Potatos
    Dessert

    Just some advice - if the chef isn't familiar with Caribbean food, go with what Mattycam suggested.  There's nothing worse than having a chef try something that is out of their realm - it usually ends up in one of two ways: either it's completely bad or it's suppose to be rice and peas, but they turned into some gourmet dish that no one recognizes.  Keep that in mind.
