Crockpot chicken?

OK, this is a dumb question but I am hoping you all won't judge me too much, haha.

I'm trying to get some more healthy food readily around the house, and in the interest of prepping early I'd like to toss some chicken in the crockpot for the day so I can just have shredded chicken on hand later. Problem is, last few times I tried it it ended up...not quite right...  Over cooked, too dry, etc.

I *thought* when my ex used to toss the chicken in the crockpot is was basically frozen, nothing added, and we just let it cook for the day.  But after my failed attempts, I'm wondering if maybe I was just willfully ignoring any prep he used to do to it ahead of time.  Any suggestions?

Re: Crockpot chicken?

  • Yeah, add enough liquid to cover it...you don't need to put in a bunch because it basically doesn't escape.  The first time I tried to make something with a thick sauce I added a bunch of water bc it was going to cook for 12 hours and I thought it would reduce.  Needless to say we ate watery chicken and gravy that night :(

  • You need enough liquid to cover the chicken. You can throw it in frozen or thawed. I usually like to do it frozen. My favorite crockpot chicken recipe is to cover it w/ salsa and lime juice and cook it for a few hours.

Maybe that's my problem.  I was tossing in about a cup of water, but not enough to cover the chicken.  Thanks, and sorry for my idiocy.  I was lucky and didn't have to do a ton of cooking for myself until the last few years.  I still have my "Way to go genius" moments ;)

  • Low sodium chicken broth works great too!
