I think you asked me how I felt about coconut oil. From the research I have read and from what others in my class have read, coconut oil has no outstanding benefits compared to say, flaxseed oil or olive oil. Coconut oil has a lot of saturated fat and although I told you we need some sat fat in our diet, too much of it can cause heart problems and high CHOL. Research is very limited b/c coconut oil is a newly introduced product but I would say that you should limit your consumption for now. I would just be careful.
