Tasty Tuesday!

I don't know about anyone else but summer is ALWAYS a busy time for us. Plus who wants to be stuck in the kitchen cooking when there are so many other fun things you can be out doing??!

So with that in mind let's hear everyone's favorite Crock Pot recipe. To start it off, here is one of my stand-by's:

Ingredients:

  • 1/2 cup chopped onion
  • 1 1/2 lbs ground chuck, browned and drained (you can also substitute with strip steak)
  • 6 medium potatoes, sliced
  • 1 can red beans, drained
  • 1 can tomatoes  or 1 can tomato soup
  • salt and pepper to taste
  • garlic powder to taste

Preparation:

Put chopped onion in the bottom of the Crock Pot; layer with browned ground beef, sliced potatoes, and beans. Spread tomatoes or soup over all. Sprinkle with seasonings as desired. Cover and cook on low for 7 to 9 hours. Serves 4 to 6.

  • Thanks for posting this! My bridesmaids actually just bought me this massive crockpot. (It's awesome- it's red and l think 7 or 8 quarts so it's HUGE.) I'm really excited to try it out! I just put your recipe in my phone because I wanted to try a roast out first. Some ideas I had to try after that:

    -an entire chicken (ahhhhhhhhhh)
    -chilli? might be really good because I can let it sit and soak for a while
    -chicken soup? Could be good for winter time!

    I've made super easy chicken soup in a pot on the stove, so I'll share my recipe for that as it should be almost the same for a crock pot.
     
    I filet some boneless, skinless chicken breats into chunks and drop them in a pot of boiling half water, half chicken stock. Add cut up carrots, celery, and whatever else vegetables you'd like a few minutes later. Let it boil until the chicken is cooked...maybe like 20 or 30 minutes? Add egg noodles at the end, for as long as your package tells you to. Sprinkle some parsley. Easy!

    I like this recipe because it involves white meat and I don't have to deal with the mess of a chicken carcass. I use half water, half chicken stock because or else boilling the chicken breasts just doesn't make it chicken-y enough for me.

    Thanks for sharing your recipe! Sounds good & also pretty easy!
    Glad you found this helpful! Don't be afraid to experiment with different recipes in the crock pot. If you can cook it in the oven or slow cook it on the stove, you can usually fix it in the crock pot. If you like soup beans ( think navy, pinto, even red beans & rice!) they are another easy meal for the CP.
    I have never cooked it, but a friend told me she has been cooking meat loaf in her CP!! Not too sure about this one, I would have to eat it 1st before I would recommend it! LOL Wink

    My favorite Crockpot recipe is cilantro lime chicken tacos! Its real simple, just put about 3 pounds of boneless skinless chicken breasts or tenders in the Crockpot, add a jar of salsa, the juice of 1 lime, and some cilantro I use alot of it cause I loooooooove cilantro. Cook on high 3 to 4 hours. I start checking it at 3 hours because the chicken breast can dry out very easily. When its done you take two forks and shred the chicken inside the pot, stir, and there you have it! I put it on flour tortillas with lettuce, cheese, tomato, and a sprinkle of lime juice. Yum!

  • I cooked a turkey meatloaf in the Crockpot before and it was delicious. But you do have to put some foil strips in the Crockpot first to lift the meatloaf out without it falling apart.
