Cupcake Recipe?? Help

My Mother and I are making our own cupcakes for the wedding. The recipes we have been trying haven’t been coming out to moist or flavorful. Does anyone have a delicious recipe they have used in the past?

    I use box mix with homemade icing and no one ever notices.

    Wilton has quite a few on their website that are really good, I've used them mulitple times. Depending on where youre located (altitude) will change the outcome of your cakes and the recipe will need to be adjusted. If you are above sea level look up high altitude baking, King Arthur Flour has a good chart on their website.

    What flavors are you trying to create?  Where are you getting your recipes?  If a cupcake isn't "moist," you can add a LITTLE extra oil to the batter.  If it's not "flavorful," increase whatever the flavor is (unless it's fresh fruit, etc.) 

    Ex: If you have a dry chocolate cupcake with little flavor, add a LITTLE extra oil to the batter and add additional cocoa powder.

    Try this:
    1 box cake mix (not one with the pudding already added to the mix)
    1 box pudding or jello of the flavor you want (ex. vanilla mix + vanilla pudding, chocolate mix + chocolate pudding, vanilla mix + pineapple jello for pineapple cake)
    1 cup sour cream
    1 cup flour
    1 cup sugar
    1/3 cup oil
    4 eggs
    1 cup milk
    Optional: flavoring extract for a stonger flavor (ex. pineapple, almond...)
    Optional: "extra something" (ex. shaved almonds added to an almond cake batter or crushed pineapple that has beed drained a lot added to pineapple batter)

    Add eggs, milk, sour cream and oil (and extract if using it) to the bowl first.  Then add mix, pudding/jello, flour and sugar to the bowl.  Mix with electric mixer for about 2 minutes. (If adding "something extra" mix in now using a spatula)  Scoop into cupcake liners no more than 1/2 full.  Bake at 325 degrees for 22-25 minutes for no dome, 350 degrees for 20-23 minutes for a small dome or 375 degrees for 18-21 minutes for a large dome.

    This will make about 4 dozen standard size cupcakes.

    I love this recipe because you can so many different flavors by just chaning the pudding/jello used.

    Try any recipe of Alton Brown's.  Go to Food network, put "cake" int he search box and then click on Alton's name under host.  I've never had anything less than a great result when using his recipes.

    We're doing these as well as a blackberry-almond and those hi-hats that look like soft-serve ice-cream cones.  Mmmm.  :)

    Thank you for all your tips and recipes.. I’m defiantly going to be trying them.We were trying to make a simple white cake so we can dye the frosting our wedding color.

    Be careful with the dye you use in the frosting.  If you can find powdered dye, use that.  Some of the dyes out there - liquid and gel - leave a horrid after taste!

    I bake cakes for friends' weddings on a regular basis.  I always, always use a box mix and just add an extra egg.  The cakes are moist, and always get rave reviews.

    Martha Stewart Cupcakes..there's a really yummy light white cupcake. I made them as a wedding test-run for my daughter's birthday..we made a lemon frosting that went really well with it! Good luck!
