Since FI practically inhaled dinner tonight, I thought I would share the recipe with all of you (this was the 1st time I had made it - got the recipe from a friend at church). My friend usually serves it cold, but we thought we'd try it hot instead since it's so cold outside and it was yummy (can't wait to try it cold when it's warmer out, too). This meal is really inexpensive, too, so that's always a plus.
Southwest Pasta Salad
1 pkg of your favorite shaped pasta (not spaghetti or linguini)
1 10-12 oz pkg frozen corn, thawed
1 can black beans, drained
1 16 oz jar of your favorite salsa
Cook the pasta and drain. Add in the remaining ingredients and mix well. If serving hot, just heat until warm (warning, I used a 3 qt pan and the mixture was pretty close to the top, so just stir carefully). Enjoy.
