NWR: Yummy soup recipe?

Hi ladies!

NWR, but I was wondering if any of you had any delicious soup recipes? I've been wanting to make a good fall soup lately & maybe send the FI off with a batch when he leaves for hunting this wknd.

Any good ones?? TIA! :)

    I have a bunch!  What are you looking for?  I have good chicken dumpling, taco soup, white chili, turkey chili, potato leek, potato, and probably a few others I am forgetting.  Haha needless to say I really like making soups, they are probably my favorite thing to cook.

    I've got some!

    Just made this one this weekend, for the family & it was a hit!  Plan on making it this week again, to bring up to the cabin!  = )  Turkey Chili Taco Soup  <---Clicky

    I love the Skinnytaste's website.  Here are all of their soup recipes!

    And this is one I got from a co-worker...  Not super good for the waist line, but tastes delicious!  = )

    Chicken & Wild Rice “Soup”

    Ingredients:


    1 pound of bacon OR bacon bits

    2 13 oz. cans of chicken
    2 small cans of cream of potato soup (10 ¾ oz.)
    2 cans of water
    1 small container of original Half & Half
    1 container of Cheeze Wiz (15 oz.)
    2 boxes Uncle Ben’s Wild Rice (6 cups total)

    Cook time – About 1 hour
     

    Cook bacon
    In a large pot prepare rice as according to directions on box.  Don’t add seasoning, (if provided)
    Pull apart bacon to desired size
    When rice is finished, add all remaining ingredients. 
    Set temperature at medium-high to high. 
    Stir occasionally.
    Let set on low heat for a few minutes for a thicker soup, otherwise it’s ready to eat!

    Enjoy!  And leftovers taste really good warmed up!!

    Skinnytaste is AWESOME. There's a chicken, shitake mushroom and wild rice soup on there that is so good and doesn't even taste like it's a healthy recipe :)

    Well I know the Taco Soup recipe off the top of my head but I'll have to get the others for you when I am at home. 

    Taco Soup:

    2 cans rotell-undrained
    2 cans corn-undrained
    2 cans of texas ranch style beans (or pinto beans with jalapenos) depends on which brands your grocery store carries. 
    1 packet of ranch seasoning
    1 packet of taco seasoning
    1 to 2 lbs. ground turkey or beef (depending on your tastes and how meaty you want.  I think 1 lb. is plenty)

    Add all cans undrained and seasoning packets.  Simmer.  Cook and drain ground meet and add to soup.  Bring to a boil and then reduce to a simmer for at least a half hour.  Top with tortilla chips, cheese, and sour cream. 

    You could add to this recipe as well, onion perhaps, but I have never messed with it.  I'll get you those other recipes sometime tomorrow probably!

    Trixie - I made the Chicken, shittake mushroom & wild rice soup tonight. So good! And so much leftover for lunches!

    I'll probably make the turkey chilli or taco soup later this week. Thanks again girls! :)

    Tortellini Soup

    1 tbsp Butter

    4 cloves garlic, minced

    2 (14 oz each) cans chicken broth

    6 fresh basil leaves chopped or 1 tsp dried

    9 oz tortellini

    ½ bunch fresh spinach

    1 (14oz) can stewed tomatoes

    ¼ cup grated parm cheese

     Melt butter over medium heat.  Add garlic and sautee for 2-3 minutes.  Add broth and bring to boil.  Add tortellini, simmer uncovered until tender (about 7 minutes)  Gradually add spinach, tomatoes and cheese – stir constantly.  Serves 4-6.

    Crock Pot Hamburger Soup  1# ground beef1 envelope dried onion soup1 envelope Italian seasoning mix (found by the salad dressing)¼ tsp seasoned salt¼ tsp black pepper3 cups boiling water8 oz diced tomatoes, undrained (can use 14oz if you want it more soupy)8 oz tomato sauce (can use 14oz to make more soupy)1 tbsp soy sauce1 cup thinly sliced celery1 cup thinly sliced carrots2 cups cooked macaroni noodles¼ cup parm cheese  Brown beef in skillet over med-hi heat, drain.  Add beef, both envelopes, season salt and pepper.  Stir in water, tomatoes with juice, tomato sauce and soy sauce.  Add carrots and celery.  Cover.  Cook on low 6-8 hours.   Cook macaroni as directed on box. Increase heat to high and add cooked macaroni and parm cheese to the crock.  Cover, cook 10-15 minutes.  Serves 6-8.

    Almost Perfect Fall Chili(Pumpkin/Sweet potato!)

    Baked Potato Soup(great with some bacon!)

    Crockpot Burritos.  (Not a soup, but you can send it with some brown rice)

    Beer Cheese Soup - seriously the BEST I've ever had.

    Makes 4 to 6 servings

     

    2 cups             Leeks (white & pale green parts only), small diced

    1 cup               Carrots, small diced

    1 cup               Celery, small diced

    2 tsp                Garlic, finely chopped

    1                      Turkish Bay Leaf (or 1/2 California)

    1/4 cup            Unsalted butter

    1/3 cup            All-purpose flour

    2 cups              Whole milk

    1 3/4 cups        Low-sodium Chicken Broth (14 fl oz)

    12-oz               Ale such as Bass (good quality)

    1 tsp                Worcestershire sauce

    1 tsp                Dry mustard

    1 tsp                Salt

    1/4 tsp             Black pepper

    1 lb                  Sharp Cheddar (preferably English; rind removed), grated (4 cups)

    3 1/2-oz           Bacon, cooked and crumbled

     

    Wash leeks in a bowl of cold water, agitating water, then lift out leeks and drain in a colander.

     

    Cook leeks, carrots, celery, garlic, and bay leaf in butter in a 4-quart heavy saucepan over moderate heat, stirring occasionally, until vegetables are soft, about 15 minutes. Reduce heat to moderately low, sprinkle flour over vegetables, cook, stirring occasionally for 3 minutes. Add milk, broth, and beer in a stream while whisking, increase heat to medium high bringing it to a boil, then reduce to simmer, whisking occasionally for 5 minutes or until somewhat thickened. Stir in Worcestershire sauce, mustard, salt, and pepper.  Remove and discard bay leaf.  Remove from heat and cool slightly before pureeing in blender or food processor, in batches if necessary.  Return to pan and reheat over medium heat.

     

    Add cheese by handfuls, stirring constantly, and cook until cheese is melted, 3 to 4 minutes (do not boil).

     

    Serve sprinkled with bacon.

    I kind of suck at making soups, but this one has always been super good when I have made it. This is the copycat for Zuppa Toscana at the OG. Obsessed with that soup. Also, I leave out the kale as I am not a fan :)
