Help with Menu?

We're trying to plan our menu for our big day and I feel a little stuck- this is what we're doing so far for the main entrees:

I wanted to do three or four entrees, and my fiancee chose to have a rib-eye roast for one, we're doing a fish dish for another (thinking lemon butter Tilapia), and what I'm stumped on is the chicken and vegetarian dishes. Do you think we need to have both a chicken and a vegetarian dish, or just a vegetarian dish?

I feel like chicken is something 'safe' that a lot of people (myself included) fall back on when other options don't seem their style, so I feel like we should consider it. I just don't want to do what I see all the time: Chicken Marsala, BBQ, etc. I was considering Chicken Kiev, but would that be too heavy for a wedding? Also, I am not really familiar with any good vegetarian dishes for a wedding.

 Are four entrees too much? I feel like money-wise I'd like to keep it to three if possible, but understand that it's important to have options for everyone invited. So I just feel like some suggestions might help us with this part of the planning stage- there's just so much to think about- thanks!

  • I don't think four entrees is too much, but I also think you'd be fine to go with beef, fish, and vegetarian.  If you want the vegetarian to also be a "safe" choice, you could do some kind of pasta - vegetarian lasagna, butternut squash ravioli, pesto w/grilled veggies, etc. - which I think non-vegetarians might choose.  Does your vegetarian option also need to cover vegans?  
  • If cost is an issue just go with the vegetarian dish.

    If cost is not an issue I don't think you can have too many options.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

    Okay, thanks for the advice. I think we'll nix the chicken. Now for the vegetarian dish- ideas? I like the idea about ravioli- are there other kinds of pasta dishes or pasta-like things that are suitable for a wedding? I'm not a foodie so I'm not really in-the-know about these things.

    Edit: We are doing buffet-style and there with be local vegetable medley and mashed potatoes, salads and the other two entrees of the rib-eye carving station and the fish. I thought that might help for ideas- I'm trying to think of something that evens out the things to pick from- like we have the meats, veggies, and now some sort of pasta..?

  • I think a vegetarian pasta would work well with what you've already planned -- the salads and veggie medley will go nicely with it.  Are you planning bread/rolls?  As PP said, lasagna (grilled veggie, spinach-and-artichoke), a specialty ravioli or pasta tossed with pesto and veggies would be really nice.  My only caution would be to stay away from long pasta, like spaghetti or linguini: not very easy to eat elegantly not to mention the splatter-factor + dress clothes issue.
  • We're doing eggplant rollantini.  I agree with PP that a pasta-type is a good pick.  Vegetable lasagna is also a good choice.  You want to make sure that what you choose is a heavy entree option, not just grilled vegatables.
  • the caterer gave us the options of eggplant rollatini with marinara, mushroom ravioli with a sherry cream sauce and squash charlotte with French puy lentils.  We chose the mushroom ravioli.

  • I would ask your caterer for ideas for a hearty vegetarian pasta dish.  They may have a few that they can do well and tend to be popular at events.
