whats the best way to do a buffet?

We're having a buffet dinner at our wedding and I want to make sure everyone stays happy and people are fed in a timely manner. Whats the best way to do this? Is calling out table numbers the way to go? Arent the people at the last table called going to be annoyed? What are your suggestions? Has anyone been to a buffet that was well done?

    I like buffets where there are 2 separate lines with the same food items.  Shorter lines.

    I saw breaking it up. Salads in one section. Meats in another, etc. This waythe people are divided and no congestion. I have seen this in a couple of weddings.

    If you are doing a salad you can have the salad served and then who ever is the first to get their salads would be the first up to the buffet line.

    I agree with the people above. The worst part of buffets are the long lines. Make sure that there is more than one person serving. Make different stations with the same thing, the amount depends on the amount of guests. Think about it as if you were in heels and hungry would you want to stand behind 60 people for food?
