    • 2 cloves garlic, minced
    • 1 small onion, diced
    • 2 small sweet potatoes, peeled and chopped
    • 2 medium carrots, sliced
    • 1/2 red bell pepper, chopped (optional)
    • 2 tbsp olive oil
    • 1 15 ounce can black beans
    • 1 15 ounce can diced tomatoes or tomato sauce
    • 1/2 cup vegetable broth
    • 1 tbsp chili powder
    • 1 tsp cumin
    • 1/2 tsp cayenne (or to taste)
    • 1/2 tsp garlic powder
    • 1/2 tsp salt
    • 1/4 tsp black pepper

    Preparation:

Sautee onions and garlic in olive oil for a minute or two, then add sweet potatoes, carrots and bell pepper until onions are soft, about 5-6 minutes.

  • ooh that sounds yummy!!!

I didn't lose any and I didn't gain any, so I'm very happy!!  Now, my goal is 10lbs by April 24th!  Definitely think I can make that happen...just need to hop on the band wagon...school is stressing me the F! out...so that isn't helping me lose any...

Goal:  work out 2 or 3 times a week, even if it means getting my ars outta bed at 6:30am...
  • Oh yay! Thank you for the recipe!

What was your biggest motivation last week?
Engagement photos! Although I still wasn't happy with how the full-body shots turned out, but that's my own issue.
If you did any workouts, what did you do?
Power Vinyasa yoga and some elliptical. I need to switch it up though, I feel like my muscles are getting stagnant.
What was your favorite healthy meal of the week?
Healthy? During the superbowl??? HAHAHAA. I made buffalo chicken dip, pulled pork, bacon mac and cheese and brownies. I'd say that was the least healthy meal I've ever made, ever. In life.
What is your goal for next week?
Get to yoga more - it's impossible when I'm working so late!
Any recipes you would like to share?
I can provide the pulled pork recipe if anyone wants it! It's SO easy in the crockpot.

    Easiest Pulled Pork Ever
    1 (2 pound) pork tenderloin
1 (12 oz) can or bottle of root beer
1 (18 oz) bottle of your favorite barbecue sauce
    8 hamburger buns, lightly toasted
Sandwich Pickles (if you want them)

Place the pork tenderloin in the slow cooker. Pour the root beer over the meat.
Cover and cook on low (6-7 hours).
    Drain well.
Shred meat with fork.  Add barbecue sauce. Put on the hamburger bun with some pickles and enjoy!
