Let's talk about pie

With Thanksgiving right around the corner, I need to start thinking about the pies I'm going to contribute. Every year my parents host Thanksgiving at their house. There is anywhere from 10-20 people depending on the year. My mom is an amazing cook and somehow, in her tiny kitchen, she manages to always make a spectacular meal with many fixings to go along side the turkey. Since she does all this work, I've started to volunteer to make the desserts. 

I sometimes change up which pies I make, but the past two years I have made the same two. They're so good that I'd miss them dearly if I didn't make them. Despite my love for everything pumpkin in the fall, I'm really not a fan of pumpkin pie. I think it's a texture issue. Though I do like pumpkin cheesecake.

So, what pies are you making for Thanksgiving? Do you have any great recipes to share? 

These are the two that I currently love - 

Chocolate Pecan Pie
(I do not make the caramel sauce. It's plenty rich on its own)

and

Spiced Apple Pear Pie
(I skip the top crust and make a crumble instead. I also never make my own dough for any pie. Store bought works just fine.)

Re: Let's talk about pie

  • I'm not hosting but I'll likely do a few pies just during the season.  I do a pumpkin pie with a gluten free graham cracker crust, a caramel apple pie (pretty standard but with caramel sauce tossed on the apples), and a number of berry crisps.  I'd like to try a cranberry-blueberry pie this year.

  • I always make pumpkin, but I swap the condensed milk for very rich, high grade vanilla ice cream. Yummmm...

    I love peach pie and blueberry pie too!

    And I discovered God's gift to the pie world while trying to lose weight: Dole (I think, maybe DelMonte) makes new fruit cups that are meant to heated up in the microwave and they come with crumble topping. It's just like cobbler, so good, only 150 calories. Yay!

    </div><div>Two of my aunts have Celiac Disease and therefore do not eat gluten. I try to make something for my one aunt who comes every year for Thanksgiving, especially since her birthday is the next day. Can you share your favorite GF dessert recipe? Last year I made her the Spiced Apple Pear pie into a GF crisp which she loved, but I love trying new recipes. </div>

  • I'll liely make either bourbon pecan pie or the chocolate pecan pie from my Scharffenberger chocolate cookbook. I'd also like to make a maple sugar pie, but I'll see what FI wants.

    My favorite GF dessert is just a simple apple crisp.  It's actually one of my H's favorite desserts GF or not.  It's super basic and simple.

    Just toss the cubed apples in 4 part granulated sugar, 2 part cinnamon, 1 part cloves.. just to coat.

    Topping is 4 part GF oatmeal, 1 part brown sugar, 1 part butter (margarine works well too), a sprinkle of cinnamon,  and a pinch of salt

    </div><div>zizibet - I usually add a splash of bourbon to my chocolate pie. A little bourbon never hurts anything :) </div>

    And then usually a few extra desserts that people request. My uncle loves "dirt" (crushed oreos mixed with pudding and whipped cream) so my mom will make that for him. We are also having peanutbutter fluff filled chocolate cupcakes this year. I'm sure the day before my mom and aunt will decide on three more desserts that we can't live without. Lol.
  • We usually have 20-30+ people for pie, so I tend to go overboard.  Added to that, my brother is a pumpkin pie addict and demands one pie for the night before Thanksgiving, and one pie to last through the weekend while he's home.  Last year his GF tried to get in on his Pre-Thanksgiving pie and he actually told her no, not even a bite because it was HIS pie.  I made an extra so he could still have all his pie and be a nice person too.

    That being said, my list for the actual day is usually:
    2 pumpkin
    1 traditional apple and 1 apple crisp
    1 peanut butter chocolate
    1 chocolate silk
    1 pear-hazelnut tart
    1 Eggnog pie (also mostly for my brother)
    1 lemon-rosemary tart
    1 chocolate mint pie
    1 fresh cranberry pie
    and 1 pecan pie
