Meal Planning

The coconut water thread got me thinking about what I wanted to cook for the next week.

Here is what I came up with:

Homemade chicken nuggets and french fries

Spaghetti

Sloppy Joes w/ fresh corn on the cob

Tacos w/ spanish rice

Grilled chicken with a vegetable medley and rice

Hamburgers with roasted potatoes.


Everything I make is boring.  What is everyone else making?  Any suggestions to improve what I have?  Please note: I typically can't put cheese on anything I'm going to eat, so it has to be something he can add later if it is on the recipe.

  • Well I made enchiladas yesterday which should take us up to Thursday, lol.  You can make them sans cheese, though and add the cheese later.  Two of my sisters can't eat cheese, so when my mom makes them, she will either make them all without cheese or half without cheese. 

    Thursday we are grilling chicken with roasted potatoes and some steamed veggies.

    Friday a girlfriend of mine is staying with us - we are running in the Fargo Marathon the next morning so we are gonna carbo-load!  I am making skinny turkey meatballs and marinara sauce in a fun recipe I got from LDY and we are going to eat it over whole wheat pasta.

  • I have seen a few posts about skinny recipes.  Is that from a cookbook or online?  I'd like to take a look at those.

  • Oh yeah - check out skinnytaste.com.  Sometimes "lighter" recipes are also kinda light on taste,  but I've had lots of success with skinnytaste recipes.  They are very yummy.

  • Last night I reheated some smoked cheddar mac and cheese that I had frozen. It was my first attempt at freezing leftover mac and cheese and I was really impressed how good it came out. 

    Tonight is pasta carbonara as I mentioned in the other thread.

    Tomorrow will be chicken satay skewers, green beans, and brown rice. I'm trying out the frozen brown rice from Trader Joe's. 

    Thursday my dad is coming into town for the food tasting! We'll probably eat out Friday and Saturday as well.

    <div>Ditto this.  Although I did find the turkey stuffed peppers to be a little bland the first time I made them.  I added a packet of taco seasoning to the ground turkey the second time, and it was much better. </div>

  • One of my favorite skinnytaste recipes is one for chicken and mushrooms in a white wine garlic sauce.  OMG.  TO DIE.

  • I noticed last week that there is finally ground chicken at the store I shop at.  I'm considering trying to come up with a new recipe for that if anyone knows of one off the top of their head!

    I like using ground chicken (or turkey) for burgers or tacos instead of beef.  Not very creative, but it's still good.

  • Oh and we will probably have tacos one night and tostadas another night with Mexican rice (or is it Spanish? I never know what to call it). That is our go-to meals if we can't think of anything else.
  • (mentioned this in the other thread) For dinner we're having tacos - ground turkey, homemade guacamole, salsa, cheese, and a dab of sour cream, with refried beans on the side. I even picked up some Corona and limes.

    Tomorrow's dinner is grilled pork chops with sweet potato fries and either green beans or asparagus. Thursday is curried chicken with madras lentils and naan bread, and Friday is going to be grilled flank steak with brown rice and broccoli.

    I haven't made next week's meal plan yet, but I do know I want to make chicken teriyaki stir fry, spaghetti with turkey meatballs, and try to make grilled curry chicken skewers. I rarely plan this far in advance, but H and I are really trying to make an effort to eat at home more often, so it's good that I have somewhat of an idea in my ahead now.

  • There is a definite difference between Spanish rice and Mexican rice.  One of them tastes disgusting and one of them is to die for.  And I always forget which one is which, lol.

  • Ground chicken freaks me out and I don't like turkey or beef. Or pork unless it's bacon. So it's either chicken breast for me or vegetarian meal. I am so difficult.

    HA! Mine is just made with rice, tomato sauce, chicken broth, and corn. I think it's Mexican. And delicious.

    Ditto. I loathe mushrooms. The flavor, the texture, everything about them. They are a fungus people. And you know what else is a fungus? Athlete's foot. And ringworm. *cringe*

    I make that comparison often (athletes foot) to FI and he tells me I'm being ridiculous. I'm glad to know I'm not the only one!

    Saturday-broccoli cheddar soup with french bread
    Sunday-spicy chipotle burgers with sweet potato fries
    Monday-spicy bean and rice burritos, chips and salsa

    How about...

    1) Italian style meatloaf (save some of the tomatoe sauce from your spaghetti night and add one cup to the ground beef mix and also spread some on top half way through baking)

    2) Chicken, broccoli, ziti (grill or saute some chicken and onion, steam some broccoli and boil ziti - mix all together with 2 cans of campbells cream of broccoli soup and bake for 15 minutes) really good!

    3) White lasagna - instead of tomato sauce use alfred sauce (with or without garlic) You can add sauteed spinach and mushrooms to the ricotta that you used to line the lasagna. To save time - by the barrilla no boil lasagna.

    Another vote for skinnytaste.

    Last night we had turkey cobb salad. The rest of the week we're having:

    Chicken and asparagus with hollandaise sauce with a side of zucchini and tomatoes sauteed in olive oil and garlic

    Leftover chicken on salad

    Burgers with swiss, mushrooms & onions. Side of sauteed spinach or kale.

    Friday night FI will probably order a pizza, and I'll get a salad.

    Pretty boring week food-wise.

    Skinnytaste is awesome! I made crock pot buffalo chicken lettuce wraps last night from a recipe off that site. Highly recommend!
  • Mon:  chicken fried rice
    Tue: burgers and sweet potato fries (chicken burger for me)
    Wed: blackened tilapia, steamed cauliflower with garlic
    Thurs: sirloins with garlic-balsamic mushrooms and steamed broccoli
    Fri: grilled chicken kebabs, and grilled pineapple
    Sat: Friendship soup if it's not too hot out
